Ground beef and pantry-ready ingredients like salsa and canned corn make this one-dish dinner nice and easy. A corn bread topper adds a homey touch.

- 1 15-ounces can Mexican-style diced tomatoes
- 1 ½ cups frozen whole kernel corn, thawed
- ½ cup plus 2 tablespoons finely shredded Mexican cheese blend, divided

- ½ cup yellow cornmeal
- 1 Tablespoon sugar
- 1 ¼ teaspoon baking powder
- 1 egg, beaten
