New-Fashioned Apple and Raisin Slaw
Crunchy and creamy are the two most important characteristics of a good slaw, but this recipe turns the traditional on its head. Sweet apples form the base of the salad, along with a generous helping of raisins, while balsamic vinegar in the dressing keeps things from getting too sweet. This is a great last-minute potluck or picnic recipe, or you could toss in some almonds to make it a healthy lunch.

Ingredients

  • 1/2 cup light sour cream
  • 3 tablespoons reduced-fat mayonnaise
  • 1 1/2 tablespoons white balsamic vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 cups unpeeled chopped Rome apple (about 1 medium)
  • 1 cup golden raisins
  • 1 (16-ounce) package cabbage-and-carrot coleslaw

Preparation

  1. Combine the first 6 ingredients in a large bowl, stirring with a whisk.
  2. Add chopped apple, 1 cup raisins, and coleslaw; toss to combine.
