A luscious Southern classic with a twist: creamy blocks of cheese blended with tangy pimentos and rich mayonnaise, accented by savory seasonings. This three‑cheese version is smooth enough for dipping yet holds body for spreading on crackers, sandwiches, or crisp vegetables.
Ingredients
- 8 oz block cream cheese, softened
- 1/2 cup low‑fat cottage cheese
- 8 oz block sharp white Cheddar cheese, freshly shredded
- 4 oz jar diced pimentos, drained
- 2 teaspoon coarse‑grain mustard
- 2 teaspoon finely grated onion
- 1 teaspoon lemon juice
- Dash of hot sauce (to taste)
- Salt, to taste
- Freshly ground black pepper, to taste
Preparation
- Place the softened cream cheese and cottage cheese in the bowl of a stand mixer fitted with the paddle attachment. Mix on low/medium speed until smooth and creamy.
- Add the drained pimentos, mustard, grated onion, lemon juice, and hot sauce. Mix on low speed until evenly combined.
- Gradually add the shredded Cheddar cheese and mix on low speed until just combined—avoid overmixing to retain some texture.
- Season with salt and freshly ground black pepper to taste.
- Chill for at least 30 minutes before serving to allow flavors to meld.
Serving Suggestion
Serve chilled with your favorite buttery crackers, toasted bread rounds, or crisp celery sticks. For a Southern touch, top with a few extra diced pimentos and freshly cracked black pepper right before serving.
