A gently reduced mixture of balsamic vinegar, sugar, and port gives a sweet-tart drizzle. It mimics some richness of aged vinegar but is not genuinely aged balsamic.

Ingredients
- 1/3 cup balsamic vinegar
- 1 tablespoon sugar
- 1 tablespoon port
Instructions
- Combine in a small nonreactive saucepan. Heat gently, stirring to dissolve the sugar.
- Maintain a very gentle simmer until reduced to about half the starting volume. Watch closely near the end to avoid scorching.
- Remove from heat and cool before judging consistency; it thickens as it cools. Use sparingly.
Cook’s notes
Choose a vinegar you enjoy. Omitting or replacing port changes the flavor and liquid balance. Cooking does not guarantee removal of all alcohol. Keep any remainder refrigerated in a clean covered container and use promptly.
Serving suggestions
Drizzle sparingly over strawberries, pears, vanilla ice cream, cheese, or a compatible savory dish.
Beverage suggestions
Choose coffee or tea with dessert, or a beverage appropriate to the savory dish.
