Slow oven toasting can develop a subtle caramel-like flavor while much of the sugar remains granular. Results vary with oven accuracy, batch size, and the baking dish.

Ingredients
- 4 pounds (about 9 cups; 1.8 kilograms) granulated white sugar
Instructions
- Heat the oven to 300°F with a rack near the center. Use a 9 × 13-inch glass or ceramic baking dish explicitly rated for this oven use; follow its manufacturer’s handling instructions.
- Spread the sugar in the dish. Toast until lightly ivory, checking at about 1 hour. Stir carefully with a heat-safe utensil.
- Continue to the color and aroma you prefer, stirring about every 30 minutes and watching closely for melting or hot spots. The original further 2–4 hours is only an estimate.
- If liquid caramel appears, stop heating. Do not try to touch or handle the hot sugar by hand. Allow it to cool safely in a heatproof location.
- Once completely cool, break up small clumps if necessary and store in a clean, dry, airtight container.
Cook’s notes
Hot sugar can cause severe burns. Do not set hot glass on a cold or wet surface. Toasting does not make sugar calorie-free, and its behavior is not guaranteed identical in every recipe. Begin with a small trial in the intended baked good; deeper toasting or grinding changes the result.
Serving suggestions
Try in a small batch of cookies, a custard, or a hot drink before making a direct substitution in a large recipe.
Beverage suggestions
Use to sweeten coffee or tea to taste.
