These Oatmeal Cranberry Pecan Cookies have a chewy, moist consistency and are packed with a mix of favorites: rolled oats, chocolate, pecans, and cranberries. Perfect for holiday baking!

Ingredients

  • 1/4 cup unsalted butter, softened
  • 6 tablespoons neutral-flavored oil (canola, melted coconut, etc.)
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 1/4 cup plus 2 tablespoons brown sugar
  • 1 large egg
  • 2 cups old-fashioned rolled oats and 1/4 cup hot water
  • 1 cup all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup dried cranberries
  • 1/3 cup chopped pecans
  • 1/3 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine softened butter, oil, and vanilla until blended.
  3. Add both sugars and mix thoroughly; then mix in the egg.
  4. In a separate bowl, combine oats and hot water and let it sit for 5 minutes until oats are slightly softened. Add them to the wet mixture.
  5. Add in flour, cinnamon, baking soda, and salt, and stir to combine it all with the wet mixture.
  6. Fold in the dried cranberries, pecans, and chocolate chips (1 cup total).
  7. Refrigerate dough for at least 10 minutes.
  8. Drop tablespoon-sized portions of dough onto parchment-lined baking sheets and bake for 12 minutes, or until the bottoms are golden.
  9. Let the cookies cool on the baking sheet until firm enough to transfer, then finish cooling on a wire rack.

Cook’s Notes

Skipping steps to allow the oats to absorb moisture, or letting the dough sit before baking, may result in flatter cookies than pictured.

What’s the sugar ratio since my husband is diabetic?

    1. Steve W Carter Avatar

Hi Lorraine! Thanks for asking. The full batch contains 1/2 cup granulated sugar and 1/4 cup plus 2 tablespoons brown sugar, along with the chocolate chips and dried cranberries. We don’t currently have verified sugar or carbohydrate information per cookie, so I wouldn’t want to give you an inaccurate number. We’ll flag this recipe for a complete nutrition calculation when we update it.

DELICIOUS! These are great warm or room temp. I used white chocolate chips & walnuts with cranberries. Thanks for the recipe.
