An easy watermelon margarita recipe that can be served frozen or on the rocks! This skinny margarita is made with fresh fruit and is perfect to make for a crowd!

Ingredients

Watermelon Simple Syrup

  • 2 cups seedless watermelon, cubed
  • 1 cup sugar

Watermelon Juice

  • 2 cups seedless watermelon
  • 1/2 cup water

Margarita

  • 4 cups frozen watermelon
  • 4 ounces silver tequila
  • 4 ounces watermelon juice
  • 2 ounces lime juice
  • 1 ounce watermelon simple syrup

Garnishes

  • Coarse salt
  • lime wedges
  • frozen watermelon slices

Procedure

For Watermelon Simple Syrup

  1. Combine the watermelon and sugar in a small saucepan over medium heat. Use a potato masher or another utensil to mash the watermelon and sugar together, pushing out the liquid and dissolving the sugar.
  2. Simmer for 5 minutes, stirring frequently.
  3. Pour the mixture through a fine mesh sieve set over a bowl or jar, pressing the watermelon to extract all the liquid.
  4. Set aside to cool completely.

Makes just over 1 cup of simple syrup.

For Watermelon Juice

  1. Combine the watermelon and water in a blender.
  2. Blend until smooth, pour through a fine mesh sieve set over a bowl or jar.

For the Margaritas

  1. Cut up your watermelon and freeze it for at least six hours or until it’s completely frozen. The watermelon will partially act like ice and make this drink even thicker than if you just used fresh watermelon.
  2. Add all ingredients to a high-speed blender like a Vitamix. Blend, blend, blend until completely smooth. You may need to stop and scrape down the sides a few times and if you have a Vitamix, use the toggle to get things moving.
  3. Pour into salted rim glass and serve with lime.

How to salt a rim for margaritas

The trick to salting a rim for a margarita is simple! All you need to do is pour some margarita salt on a plate, or if you bought it in a specific margarita salt tub it should already be in the right shape.

  1. Cut a lime into wedges and rub the wet part against the rim of the glass in a circular motion.
  2. Then dip the cup upside down onto the salt and press down, moving slowly to ensure all sides are covered.
