Recreate the iconic taste of Olive Garden’s Alfredo sauce at home with this easy recipe. Creamy, cheesy, and bursting with flavor, this sauce is perfect for pasta, chicken, and more!

Ingredients

  • 1/2 cup butter
  • 3-4 cloves garlic, minced
  • 2 Tablespoons all-purpose flour
  • 1 1/2 cups heavy cream
  • 1/2 cup milk
  • 1 cup freshly grated Parmesan cheese
  • 1/2 cup freshly grated Romano cheese
  • Salt and black pepper, to taste
  • Freshly grated nutmeg, to taste (optional)

Procedure

  1. In a large saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
  2. Whisk in the flour and cook for 1-2 minutes, stirring constantly, to remove the raw flour taste. The mixture should be smooth and bubbly.
  3. Gradually whisk in the heavy cream and milk, stirring continuously to prevent lumps from forming. Bring the mixture to a gentle simmer, stirring occasionally.
  4. Reduce the heat to low and add the grated Parmesan and Romano cheeses. Stir until the cheeses have melted and the sauce is smooth.
  5. Season the sauce with salt, black pepper, and a pinch of freshly grated nutmeg (if desired). Taste and adjust the seasoning as needed.
  6. Simmer the sauce for an additional 5-10 minutes, stirring occasionally, until it reaches your desired consistency. If the sauce becomes too thick, add a splash of milk or cream to thin it out.
  7. Serve the Alfredo sauce hot over your favorite pasta, such as fettuccine. Garnish with additional grated Parmesan cheese and freshly chopped parsley, if desired.
  8. Store any leftover sauce in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop, adding a splash of milk or cream if needed to restore the creamy consistency.

Cook’s Notes

  • For best results, use freshly grated Parmesan and Romano cheeses. Pre-shredded cheeses may not melt as smoothly due to added anti-caking agents.
