Ingredients

Chocolate Pecan Crust

  • 1 1/2 cups chocolate wafer cookies, finely crushed
  • 1/4 cup finely chopped pecans
  • 1/4 cup melted unsalted butter

Pecan Cream Mousse Layer

  • 12 oz cream cheese, softened
  • 1/2 cup mascarpone cheese
  • 3/4 cup smooth pecan butter (or almond butter as an alternative)
  • 3/4 cup powdered sugar, sifted
  • 1 cup heavy whipping cream, whipped to stiff peak
  • 1/3 cup chopped, toasted pecans

Silky Chocolate Ganache

  • 1 cup high-quality dark chocolate (60-70% cocoa), finely chopped
  • 3/4 cup heavy cream
  • 1 Tablespoon unsalted butter (for shine)

Garnish

  • Swirls of whipped cream
  • Toasted pecan halves
  • Dark chocolate shavings or curls
  • Drizzle of melted chocolate (optional)

Procedure

  1. Prepare the Crust: In a medium bowl, combine the crushed chocolate wafers, chopped pecans, and melted butter. Mix until the texture resembles wet sand.
  2. Press the mixture evenly into the bottom of a 9-inch springform pan to form a compact crust. Refrigerate for at least 20 minutes to set.
  3. Pecan Cream Mousse Layer: In a large mixing bowl, beat the softened cream cheese and mascarpone together until smooth and creamy.
  4. Add the pecan butter and sifted powdered sugar, and beat until fully incorporated and fluffy.
  5. Gently fold in the whipped heavy cream until the mixture is light and airy.
  6. Add the toasted chopped pecans for texture, folding them in carefully.
  7. Spread this mousse layer evenly over the chilled crust. Smooth the top with a spatula, and refrigerate for at least 4 hours, or until firm.
  8. Chocolate Ganache: Place the chopped dark chocolate in a heatproof bowl.
  9. In a small saucepan, heat the heavy cream until it just starts to simmer (do not boil). • Pour the hot cream over the chocolate and let it sit for about a minute, then stir until smooth and glossy. Stir in the butter to give it an extra shine.
  10. Allow the ganache to cool slightly, then pour it over the mousse layer, spreading it evenly with a spatula. Refrigerate until set.
  11. Decorate the Cake: Once the ganache has set, pipe delicate swirls of whipped cream around the edges.
  12. Arrange toasted pecan halves between the whipped cream swirls for a refined touch.
  13. Garnish with chocolate shavings or curls for a touch of elegance, and drizzle a bit of melted chocolate if desired.
  14. Serve: Carefully remove the springform pan and transfer the cake to a serving plate.
  15. Slice with a warm knife for clean cuts, and serve each slice topped with extra whipped cream or a sprinkle of finely chopped pecans, if desired.
