Ingredients
- 12 oz spaghetti or your favorite pasta
- 1 large onion, thinly sliced
- 2 Tablespoons olive oil
- 2 Tablespoons chili oil (adjust to taste)
- 2 garlic cloves, minced
- 1/2 cup heavy cream
- 1 teaspoon Italian seasoning
- Salt, to taste
- Grated Parmesan (optional)
Procedure
- Cook the Pasta: Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
- Caramelize the Onions: While the pasta cooks, heat olive oil in a large skillet over medium heat.
- Add the sliced onions and cook, stirring occasionally, until golden brown and caramelized (about 8–10 minutes).
- Build the Sauce: Add the garlic to the caramelized onions and sauté for 1 minute until fragrant.
- Stir in the chili oil and cook for another 30 seconds.
- Reduce the heat to low and mix in the heavy cream, Italian seasoning, and a pinch of salt.
- Combine: Add the cooked pasta to the skillet and toss to coat in the sauce. If the sauce is too thick, add a splash of the reserved pasta water to achieve your desired consistency.
- Taste and adjust seasoning as needed.
- Serve: Plate the pasta and, if desired, top with grated Parmesan for an extra layer of flavor.
