Ingredients
- 2 large chicken breasts, cut horizontally to make 4 thin cutlets
- 2 Tablespoons avocado or olive oil
- 3 garlic cloves, finely chopped
- 1 Tablespoon Italian seasoning
- 1/4 teaspoon salt
- 1/2 teaspoon pepper
- 3 cups fresh spinach
- 1 cup mushrooms, sliced
- 8 ounces cream cheese, softened
- 1 cup mozzarella cheese, grated
- 1/2 cup Parmesan cheese, grated
Procedure
- Preheat and Prep: Preheat your oven to 400°F.
- Pound the chicken cutlets to an even thickness for uniform cooking.
- Season the Chicken: In a large bowl, combine 1 Tablespoon of oil, garlic, Italian seasoning, salt, and pepper. Add the chicken cutlets and toss until well-coated.
- Cook the Spinach and Mushrooms: Heat the remaining 1 Tablespoon of oil in a large skillet over medium heat.
- Add the spinach and mushrooms, stirring until the spinach is wilted, about 3 minutes. Remove from heat and set aside.
- Prepare the Creamy Filling: In a mixing bowl, combine the cream cheese, spinach-mushroom mixture, 1/2 cup mozzarella, and Parmesan cheese. Mix until smooth and creamy.
- Sear the Chicken: Using the same skillet, sear the seasoned chicken for about 2 minutes per side until lightly browned. Arrange the chicken in a greased 9×9-inch baking dish.
- Assemble the Bake: Spread the cream cheese mixture evenly over the seared chicken.
- Sprinkle the remaining 1/2 cup of mozzarella over the top.
- Bake to Perfection:Place the dish in the oven and bake for 20-30 minutes, or until the chicken is fully cooked (internal temperature of 165°F) and the cheese is lightly browned and bubbling.
- Serve: Let the bake cool slightly before serving. Pair it with a side of roasted vegetables, a fresh salad, or garlic bread for a complete meal.
Optional Additions
