This elevated take on a classic lemon chicken orzo soup blends comforting flavors with refined elegance. The velvety broth is infused with zesty lemon and fresh herbs, complemented by tender orzo, delicate cream, and roasted chicken. Finished with a bright parsley garnish, it’s perfect for an elegant dinner party or an indulgent weeknight meal.

Ingredients

  • 2 Tablespoons olive oil
  • 1 medium onion, finely diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 garlic cloves, minced
  • 8 cups chicken stock
  • 1 cup orzo pasta
  • 2 cups cooked shredded chicken (roasted or poached)
  • Zest and juice of 2 lemons
  • 1/2 cup heavy cream
  • 2 Tablespoons fresh dill, chopped
  • 2 Tablespoons fresh parsley, chopped (plus extra for garnish)
  • Salt and freshly ground pepper to taste
  • Crusty bread, for serving

Procedure

  1. Sauté Vegetables: Heat olive oil in a large, heavy-bottomed pot over medium heat. Add onion, carrots, and celery. Cook for 5–7 minutes until softened. Stir in garlic and cook for 1 minute until fragrant.
  2. Simmer Broth: Pour in chicken stock and season with salt and pepper. Bring to a boil, reduce to a simmer, and cook for 10 minutes to meld flavors.
  3. Cook Orzo: Stir in orzo pasta and simmer for 8–10 minutes, stirring occasionally, until the pasta is al dente.
  4. Add Chicken and Lemon: Add shredded chicken, lemon zest, and lemon juice to the pot. Simmer for another 5 minutes to warm through.
  5. Incorporate Cream and Herbs:

Reduce heat to low and stir in heavy cream, dill, and parsley. Adjust seasoning with additional salt, pepper, or lemon juice to taste.

6. Serve: Ladle soup into bowls, garnish with parsley, and serve alongside warm, crusty bread.

Chef’s Tip

For an extra layer of sophistication, finish each bowl with a drizzle of high-quality olive oil or a sprinkle of grated Parmesan.
