Ingredients

For the Chiles

  • 6 large poblano peppers, fire-roasted and peeled
  • 4 ounces aged Monterey Jack cheese, grated
  • 4 ounces queso quesadilla, grated
  • 2 ounces cotija cheese, crumbled (optional, for added tang)
  • 8 egg whites
  • 4 egg yolks
  • 1/2 cup all-purpose flour
  • 1 teaspoon sea salt
  • Vegetable oil, for frying

For the Roasted Tomato-Jalapeño Sauce

  • 5–6 ripe Roma tomatoes
  • 2 Jalapeños, roasted and peeled
  • 3 garlic cloves, roasted in their skins
  • 1/4 small white onion, roasted
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried Mexican oregano
  • 1/2 Tablespoon chicken bouillon or 1 teaspoon kosher salt
  • 1/4 cup dry white wine (optional, for depth)
  • 2 Tablespoons olive oil

Garnishes

  • Fresh cilantro leaves
  • Thinly sliced radishes
  • A drizzle of crema or crème fraîche
  • Lime wedges

Procedure

Prepare the Roasted Sauce

  1. Roast the vegetables: Char the tomatoes, jalapeños, garlic, and onion over an open flame or under a broiler until their skins are blackened and blistered. Place the roasted Jalapeños in a bowl, cover with plastic wrap, and let them steam for 5 minutes. Peel and deseed the Jalapeños. Remove the garlic skins.
  2. Blend the sauce: Add the roasted tomatoes, Jalapeños, garlic, and onion to a blender. Blend with cumin, smoked paprika, oregano, and chicken bouillon until smooth.
  3. Simmer the sauce: Heat olive oil in a saucepan over medium heat. Add the blended sauce and sauté for 2–3 minutes. Deglaze with white wine (if using) and simmer for 10 minutes. Adjust seasoning as needed and keep warm.

Prepare the Poblanos

  1. Char and peel: Char the poblano peppers over an open flame or under a broiler until their skins are blistered.
  2. Place them in a bowl and cover with plastic wrap to steam. After 5–10 minutes, carefully peel off the skin without tearing the peppers.

Stuff the poblanos

  1. Mix the Monterey Jack, queso quesadilla, and cotija cheeses.
  2. Stuff each pepper with the cheese mixture and gently close the opening with a toothpick.

Make the Batter

  1. Whisk the egg whites in a metal bowl until stiff peaks form.
  2. Gently fold in the egg yolks, being careful not to deflate the mixture.

Coat and Fry

  1. Heat vegetable oil in a deep skillet to 350°F (180°C).
  2. Lightly dust each stuffed poblano with flour, shaking off excess.
  3. Dip the floured poblano into the egg batter, ensuring a smooth, even coating.
  4. Fry each poblano until golden and crispy, about 3–5 minutes per side. Drain on paper towels.

Plate and Garnish

  1. 1. Place a generous spoonful of the Roasted Tomato-Jalapeño sauce on each plate.
  2. Nestle a chile relleno on top of the sauce.
  3. Garnish with a drizzle of crema, fresh cilantro leaves, thinly sliced radishes, and a wedge of lime.
