Ingredients

For the Cookie Dough

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 Tablespoon vanilla extract
  • 1 egg
  • 1 egg yolk
  • 2 cups chocolate chips

For the Cheesecake Filling

  • 1 8-ounce package  cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract

Procedure

  • Preheat Oven: Preheat your oven to 325°F (165°C). Line your cookie sheets with parchment paper.
  • Prepare the Cookie Dough: In a medium bowl, whisk together the flour, baking soda, and salt. In a separate large bowl, cream together the melted butter, brown sugar, and granulated sugar until smooth and well combined. Beat in the vanilla extract, egg, and egg yolk until fluffy. Gradually add the dry ingredients and stir until combined. Fold in the chocolate chips.
  • Make the Cheesecake Filling: In a bowl, beat the softened cream cheese with the sugar and vanilla extract until smooth and creamy.
  • Assemble the Cookie: Scoop out about 1½ tablespoons of cookie dough and roll it into a ball. Use your finger or a spoon to create a small hole in the center of each dough ball. Fill the hole with a teaspoon of the cheesecake mixture, then gently cover the cheesecake with more cookie dough, sealing the edges to fully encase the cheesecake filling.
  • Bake: Place the filled dough balls onto the prepared cookie sheets, spacing them about 2 inches apart. Bake for 15-18 minutes, or until the edges of the cookies are golden and the centers are set. Allow the cookies to cool on the cookie sheets for 5 minutes before transferring them to a wire rack to cool completely.

Cook’s Notes

  • Chill the Cookie Dough: Chill the dough for 30 minutes before shaping it. This makes it easier to handle and helps the cookies maintain their shape while baking.
  • For Extra Flavor: Add a sprinkle of flaky sea salt on top of each cookie before baking to enhance the sweetness and add a touch of sophistication.

These Cheesecake Stuffed Chocolate Chip Cookies are the perfect treat for any occasion, offering the delightful combination of gooey chocolate chips and creamy cheesecake in every bite!
