This sandwich packs bold, spicy flavors with crispy, juicy chicken and refreshing toppings to balance the heat. Perfect for anyone who loves a fiery kick!

Ingredients

For the Chicken

  • 4 boneless, skinless chicken thighs (or breasts, if preferred)
  • 1 cup buttermilk
  • 1 egg
  • 1 Tablespoon hot sauce
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil for frying

For the Nashville Hot Sauce

  • 1/3 cup hot frying oil (reserved from frying)
  • 2 Tablespoons cayenne pepper
  • 1 Tablespoon brown sugar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon salt

For the Sandwich

  • 4 brioche buns
  • Pickle slices
  • 1 cup tangy coleslaw (optional, but highly recommended!)
  • 2 Tablespoons butter (for toasting buns)

Preparation

  1. Marinate the Chicken: In a bowl, mix buttermilk, egg, and hot sauce. Add chicken and marinate for at least 1 hour, or overnight for deeper flavor.
  2. Prepare the Breading: In a separate bowl, mix flour, cornstarch, and spices (paprika, garlic powder, onion powder, cayenne, salt, and pepper).
  3. Bread the Chicken: Remove chicken from buttermilk, letting excess drip off. Coat each piece in the flour mixture, pressing to ensure even coverage. Let the breaded chicken rest on a wire rack for 10 minutes to set the coating.
  4. Fry the Chicken: Heat 2 inches of vegetable oil in a skillet or fryer to 350°F (175°C).
  5. Fry chicken in batches for 6–8 minutes, or until golden brown and fully cooked (internal temperature of 165°F/75°C).
  6. Drain on a wire rack and reserve 1/3 cup of frying oil for the hot sauce.
  7. Make the Nashville Hot Sauce: Combine the reserved frying oil with cayenne, brown sugar, smoked paprika, garlic powder, chili powder, and salt. Whisk until smooth.
  8. Brush the sauce generously over the fried chicken.
  9. Assemble the Sandwich: Toast brioche buns with butter until golden.
  10. Layer pickles on the bottom bun, add the hot chicken, and top with coleslaw for a creamy crunch.
  11. Finish with the top bun and serve immediately.

Serving Suggestion

To complement the heat, pair this fiery sandwich with a refreshing peach iced tea or a cold, creamy milkshake. If you’re feeling adventurous, try a crisp, citrusy IPA to enhance the bold flavors!
