Ingredients
Pasta
- 15 dried lasagna noodles (not no-boil; about 3/4 of a 1-pound box)
Cheese Layer
- 8 ounces sharp cheddar cheese, shredded (about 2 cups)
- 8 ounces Monterey Jack cheese, shredded (about 2 cups)
- 1 15-ounce container whole-milk ricotta cheese (about 2 cups), divided
Meat Sauce
- 1 Tablespoon vegetable oil
- 1 large red onion, diced (about 1 3/4 cups)
- 1 large red bell pepper, diced (about 1 1/2 cups)
- 1 pound lean ground beef
- 8 ounces raw mild Italian sausage (casings removed)
- 1 1/2 teaspoons chili powder
- 3/4 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon ground cumin
- 1 24-ounce jar fire-roasted marinara sauce (about 3 cups)
- 1 14.5-ounce can fire-roasted diced tomatoes with juices
- 1 7-ounce can diced green chiles with juices
Optional Garnish
- Chopped fresh cilantro leaves
Preparation
- Prepare Lasagna Noodles: Heat oven to 350°F. Arrange the lasagna noodles in a 9×13-inch baking dish and cover with very hot tap water. Soak for 20 minutes, moving the noodles occasionally to prevent sticking. Drain noodles and set aside. Wipe the dish dry.
- Cook the Meat Sauce: Heat the tablespoon of vegetable oil in a large skillet over medium heat. Add diced onion and bell pepper, cooking until softened, about 5 minutes.
- Add ground beef, sausage, chili powder, salt, pepper, and cumin. Cook until the meat is browned and crumbled, about 8 minutes.
- Stir in marinara sauce, fire-roasted diced tomatoes, and green chiles. Bring to a simmer, then turn off the heat.
- Layer the Lasagna: Spread 3/4 cup meat sauce in the bottom of the baking dish. Arrange 5 lasagna noodles on top, breaking as needed to fit.
- Spread 1 cup ricotta cheese evenly over the noodles. Spoon 3 cups of meat sauce over the ricotta, then sprinkle 1 cup of the cheese blend on top.
- Repeat the layers: noodles, ricotta, meat sauce, and cheese. End with the final layer of noodles, spread with remaining meat sauce, and sprinkle with the remaining cheese blend.
- Bake the Lasagna: Bake uncovered for 30–40 minutes, or until the noodles are tender, the sauce is bubbling, and the cheese is golden and melted.
- Let the lasagna cool for 20 minutes before serving. Garnish with cilantro, if desired.
