Ingredients
Potato Layer
- 8 ounces shredded mozzarella cheese
- 3 large potatoes, peeled
- Olive oil
- 1 teaspoon salt
- 1/2 teaspoon paprika
- 1/2 teaspoon onion powder
Ground Meat Layer
- 2 Tablespoons olive oil
- 1 small onion, finely chopped
- 1/2 green bell pepper, finely chopped
- 1/2 red bell pepper, finely chopped
- 2 cloves garlic, minced
- 1 lb ground beef or pork (can also substitute with turkey or chicken)
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/8 teaspoon cayenne pepper (optional)
- 1 teaspoon tomato paste
- 2 Tablespoons marinara sauce
- Assembly
- 4 ounces shredded mozzarella cheese
- Garnish: Fresh parsley and chili pepper flakes
Preparation
- Potato Layer: Preheat your oven to 400℉. Line a 17” x 12” baking pan with parchment paper. Spread 8 oz of shredded mozzarella cheese evenly over the parchment to form a base layer.
- Using a mandoline, slice the potatoes lengthwise into 1/8-inch slices. Arrange the slices on the cheese layer, overlapping slightly to cover the entire pan.
- Lightly brush the potato layer with olive oil and sprinkle with salt, paprika, and onion powder.
- Bake for 20-25 minutes until the potatoes are tender and the cheese base is set.
- Ground Meat Layer: Heat 2 tablespoons olive oil in a large pan over medium heat. Add chopped onion and bell peppers. Sauté for 3-4 minutes until softened.
- Stir in minced garlic and cook for 30 seconds until fragrant.
- Add ground beef or pork to the pan. Use a spoon to break it apart and cook until no longer pink.
- Drain any excess fat and stir in paprika, oregano, cayenne (if using), tomato paste, and marinara sauce. Cook for another 2-3 minutes to meld flavors. Remove from heat and set aside.
- Assembly: Once the potato layer has cooled slightly, sprinkle a thin layer of mozzarella cheese over the potatoes.
- Spread the cooked ground meat mixture evenly over the potato layer, being careful not to disturb the structure.
- Sprinkle another layer of mozzarella cheese on top of the meat.
- Starting from the shorter side of the rectangle, carefully roll the potato layer into a log. Use the parchment paper to assist if necessary.
- Place the roll seam-side down back on the baking sheet. Sprinkle the top with a little more mozzarella cheese.
- Return to the oven and bake for 7-10 minutes until the cheese on top is bubbly and golden.
- Allow the roll to rest for 5 minutes before slicing. Garnish with fresh parsley and chili pepper flakes, then serve.
Suggested Side Dishes
- Roasted Vegetables: A medley of roasted carrots, zucchini, and Brussels sprouts, seasoned with olive oil, garlic, and rosemary, complements the richness of the cheesy potato and meat roll.
- Fresh Garden Salad: A light salad with mixed greens, cherry tomatoes, cucumbers, and a tangy vinaigrette balances the hearty main dish.
- Steamed Green Beans with Lemon and Almonds: Tossed in a lemon-butter sauce and sprinkled with toasted almonds, this adds a refreshing crunch and citrusy zing to the plate.
- Garlic Herb Dinner Rolls: Warm, fluffy rolls with a hint of garlic and parsley offer a comforting addition for mopping up any extra sauce.
- Creamy Coleslaw: The crisp, slightly tangy coleslaw acts as a cooling contrast to the warm and cheesy flavors.

Suggested Beverages
- Red Wine: A medium-bodied red like Merlot or Cabernet Sauvignon pairs beautifully with the savory flavors of the meat and cheese.
- White Wine: If you prefer white wine, a buttery Chardonnay complements the cheese and potato richness.
- Beer: A pale ale or amber lager provides a slightly hoppy contrast to the creamy, cheesy flavors.
- Iced Tea: Unsweetened or lightly sweetened iced tea, with lemon, adds a refreshing, non-alcoholic balance.
- Sparkling Water with Citrus: Serve sparkling water with a slice of lemon, lime, or orange for a crisp, palate-cleansing beverage.
- Lemonade or Citrus Spritzer: For a sweet yet tangy option, lemonade or a citrus-flavored spritzer brightens the meal.
- Cranberry or Pomegranate Juice Mocktail: Mix cranberry or pomegranate juice with a splash of sparkling water for a festive, non-alcoholic drink.
