This light and airy yellow sponge cake takes a delightful twist with the addition of roasted pistachios, cardamom, and a touch of almond extract. The pistachios bring a nutty richness, while the cardamom adds a warm, aromatic spice. Together, these ingredients transform a simple box cake mix into an elegant dessert that’s perfect on its own or as the base for more elaborate cakes or trifles.

Ingredients

  • 1 box (15.25 oz) yellow cake mix (without pudding in the mix)
  • 1/2 cup (90g) unsalted roasted pistachios, shelled
  • 1/2 teaspoon ground cardamom
  • 3 large eggs, at room temperature
  • 1/2 cup (120 ml) whole milk, at room temperature
  • 1/4 cup (60g) unsalted butter, melted (instead of oil)
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 1/4 cup (60 ml) hot water — 120° to 130°

Preparation

  1. Preheat and Prepare the Pan: Preheat your oven to 350°F (175°C). Grease and flour an 8-inch or 9-inch round cake pan (or line the bottom with parchment paper) to prevent sticking and ensure a smooth release after baking.
  2. Prepare the Pistachios: In a food processor or spice grinder, finely chop or grind the pistachios until they are broken into small pieces (similar to breadcrumbs, but avoid turning them into a paste). This ensures a fine distribution of pistachio flavor throughout the cake.
  3. Mix the Dry Ingredients: In a large bowl, combine the yellow cake mix, ground pistachios, and ground cardamom. Stir gently to ensure the pistachios and cardamom are evenly distributed throughout the dry mix.
  4. Prepare the Wet Ingredients: In a separate bowl, whisk together the eggs, whole milk, melted butter, almond extract, and vanilla extract. Be sure to use room temperature eggs and milk for the smoothest batter.
  5. Combine Wet and Dry Ingredients: Gradually add the wet ingredients to the dry ingredients, mixing on low speed with a hand mixer or stand mixer until just combined. Then, increase the speed to medium and beat for 2 minutes until the batter is smooth and slightly airy.
  6. Add the Hot Water: Add the hot water to the batter and stir gently to combine. This step will loosen the batter and create a sponge-like texture.
  7. Bake the Cake: Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. The cake should feel springy when gently pressed in the center.
  8. Cool the Cake: Allow the cake to cool in the pan for about 10 minutes. Then, run a knife around the edges of the cake to loosen it. Invert the cake onto a wire rack and let it cool completely.
  9. Serve and Enjoy: Once the cake is completely cool, it’s ready to serve! You can enjoy it plain, or you can top it with whipped cream, fresh fruit, or a light glaze. It also works beautifully as a base for layered desserts like trifles.

Serving Suggestions

  • Whipped Cream & Berries: Top slices of cake with lightly sweetened whipped cream and fresh berries for a refreshing contrast to the rich, nutty flavor.
  • Frosting or Glaze: Frost with a simple buttercream, cream cheese frosting, or a honey-cinnamon glaze for added sweetness and elegance.
  • Layered Desserts: Use the cake as the base for a trifle or layered parfait, pairing it with fruit, custard, or yogurt for a more indulgent dessert.
  • Nuts and Syrup: Garnish with extra chopped pistachios and drizzle with a honey or maple syrup glaze for added richness.
  • Pistachio Cardamom Tres Leches Cake: A unique twist on the classic tres leches cake.

Storage

Store any leftover cake in an airtight container at room temperature for up to 2 days. If you want to keep it longer, refrigerate the cake for up to 5 days. You can also freeze the cake; wrap it tightly in plastic wrap and foil, and it will stay fresh in the freezer for up to 3 months.

This pistachio and cardamom yellow sponge cake elevates the humble box mix to something truly special. The nutty flavor of pistachios and the warm spices of cardamom, combined with the light and fluffy texture of the cake, create a delightful dessert that’s both easy to make and full of flavor.
