Ingredients

  • 2 cups fresh pineapple, diced
  • 1 large cucumber, diced (peeled if preferred)
  • 1/2 small red onion, thinly sliced
  • 1/4 cup fresh cilantro or mint, chopped
  • 1 small Jalapeño, finely diced (optional)
  • Juice of 1 lime
  • 1 Tablespoon honey (or maple syrup for a vegan version)
  • 1/2 teaspoons  salt
  • 1/4 teaspoons  black pepper

Preparation

  1. In a large bowl, combine the pineapple, cucumber, red onion, and chopped herbs.
  2. If using Jalapeño, add it now for a subtle kick of heat.
  3. In a small bowl, whisk together the lime juice, honey (or maple syrup), salt, and black pepper until well blended.
  4. Pour the dressing over the salad ingredients and toss gently to coat everything evenly.
  5. Chill in the fridge for 15–30 minutes to let the flavors mingle—or serve right away for instant refreshment!

Tips & Variations

  • Swap red onion for green onions for a milder bite.
  • Add a sprinkle of Tajín or chili-lime seasoning for an extra zing.
  • Serve it over greens or with grilled shrimp for a light, tropical meal.
