These Charred Green Beans deliver a perfect balance of smoky blistered edges, vibrant citrus, and a touch of garlic. Quick to make and full of texture, this dish elevates humble green beans into a crisp-tender side with serious flavor. Ideal for grilled meats, roasted chicken, or summer spreads.
Ingredients
- 1 pound fresh green beans, trimmed
- 1 Tablespoon olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon cracked black pepper
- 1 clove garlic, finely minced (or 1/4 teaspoon garlic powder)
- Zest of 1 lemon
- 1 Tablespoon lemon juice (optional)
- 1 Tablespoon unsalted butter or extra olive oil (for finishing)
- Optional: 1/4 teaspoon red pepper flakes or a sprinkle of Parmesan
Preparation
- Preheat Pan or Grill: Heat a large cast iron skillet (or grill pan) over medium-high heat until very hot but not smoking.
- Char the Beans: Toss green beans with olive oil, salt, pepper, and garlic. Spread them in a single layer in the hot pan. Cook undisturbed for 2–3 minutes to develop color, then stir occasionally until beans are blistered and tender-crisp, about 7–8 minutes total.
- Finish with Zest: Remove from heat. Immediately toss with lemon zest, butter (or a drizzle of oil), and optional lemon juice for brightness.
- Optional Add-Ons: For extra zing, sprinkle with red pepper flakes. For richness, add grated Parmesan just before serving.
Serving Notes
- Serve hot as a side to grilled steak, roasted chicken, or spicy mains.
- These also work well chilled in summer salads with crumbled feta or toasted almonds.
