Succulent Gulf shrimp and crisped andouille sausage rest atop a bed of velvety stone-ground grits, enriched with sharp white cheddar and heavy cream. The dish is finished with a luxurious Cognac-infused cream sauce, flecked with hints of garlic, shallot, and Dijon, bringing balance and depth. Garnished with scallion curls and a charred lemon wedge, this elevated Southern classic is as refined as it is comforting — bold, smoky, silky, and irresistibly rich.
Ingredients
- 1/2 lb U10–15 Gulf shrimp, peeled & deveined, tail-on
- 1 teaspoon kosher salt
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne
- 1 teaspoon olive oil
- 2 oz dry andouille sausage, finely diced
- 2 Tablespoons unsalted butter, divided
- 1 small shallot, minced
- 1 clove garlic, finely grated
- 1/4 cup Cognac or good-quality brandy (can sub dry sherry)
- 1/4 cup seafood or chicken stock
- 2 Tablespoons heavy cream
- 1 teaspoon fresh lemon juice
- 1 teaspoon Dijon mustard (yes, trust it)
- 1 Tablespoon cold butter (for mounting the sauce)
- Optional: a splash of Tabasco, Worcestershire, or hot smoked paprika
Garnish
- Scallion curls or microgreens
- Lemon zest
- Charred lemon wedge
- Optional: crispy shallots or fried okra chips
Procedure
- Season & marinate shrimp: Toss shrimp with salt, paprika, cayenne, and olive oil. Let rest 10–15 min at room temp.
- Make the grits: Use Velvety Southern-Style Grits with Cream, Butter & White Cheddar. Keep warm. Add a splash of cream if it tightens up too much.
- Sear andouille & build flavor: In a sauté pan over medium heat, render andouille until crisp. Remove and reserve.
- In the same pan, add 1 tbsp butter and sauté the minced shallot until translucent. Add garlic and cook 30 seconds more.
- Deglaze with Cognac: Pull pan off the heat. Carefully add Cognac (tilt to flambé if you’re feeling dramatic — optional but hell yes). Let it reduce by half.
- Build the sauce: Return to heat. Add stock and reduce by half again. Stir in cream, mustard, and lemon juice. Let it thicken slightly. Off heat, swirl in cold butter to finish. Strain if you want a silky smooth finish.
- Sear the shrimp: In a hot cast-iron or stainless pan, sear shrimp for ~1½ minutes per side in a touch of oil until just opaque and slightly charred.
- To Plate: Spoon a creamy pillow of white cheddar grits into a warm shallow bowl.
- Arrange shrimp artfully — tails arched, not dumped.
- Spoon over the Cognac cream sauce with andouille bits.
- Garnish with scallion curls, lemon zest, and a dramatic charred lemon wedge.
- Optional: drop one perfect crispy shallot or okra chip on top — like a chef’s kiss.
Chef’s Note
This dish shines when components are tight but not overworked. Let the shrimp carry a little smoke. Let the sauce sing with acid and fat. And don’t skimp on quality grits or cheese.
