A delicious fusion of smash burgers and tacos — juicy hamburger patties pressed inside warm flour tortillas, grilled to crispy perfection, then topped with charred street corn and a creamy jalapeño ranch sauce. Perfect for a fun weeknight dinner or casual gathering.

Ingredients

For the Smash Burgers

  • 1.5 lbs ground hamburger (80/20)
  • 6 flour tortillas (taco-sized)
  • Salt and freshly ground black pepper, to taste

Creamy Jalapeño Sauce

  • 3/4 cup cilantro leaves, large stems removed
  • 1/2 cup pickled Jalapeños
  • 2 Tablespoons pickled Jalapeño juice
  • 3/4 cup mayonnaise
  • 3/4 cup sour cream
  • 1 heaping tablespoon dry ranch seasoning (Hidden Valley or similar)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 Tablespoon fresh lime juice
  • 1/4 cup buttermilk (optional)

Street Corn Topping

  • 5–6 ears corn, husked and kernels removed
  • 1/3 cup mayonnaise
  • 1 garlic clove, minced
  • Juice and zest of 1 lime
  • 1/3 cup sliced scallions
  • 1/3 cup grated cotija cheese
  • 1/4 cup minced cilantro, large stems removed
  • 1 Jalapeño, diced
  • 1/2–1 teaspoon chili powder
  • 1/2–1 teaspoon Tajín seasoning
  • 1/4 teaspoon salt
  • 2 Tablespoons olive oil

Preparation

  1. Prepare the Street Corn Topping: Heat olive oil in a large skillet over medium-high heat. Add corn kernels and cook, stirring frequently, until they begin to char, about 5–7 minutes. Remove from heat and let cool.
  2. In a bowl, combine mayonnaise, lime juice, lime zest, garlic, Tajín, chili powder, salt, and pepper. Stir in the charred corn, scallions, cilantro, jalapeño, and cotija cheese. Mix well. Set aside or refrigerate until ready to use.
  3. Make the Creamy Jalapeño Sauce: In a food processor, purée cilantro leaves, pickled Jalapeños, and their juice until finely minced.
  4. In a separate bowl, whisk together mayonnaise, sour cream, ranch seasoning, garlic powder, and salt. Stir in the cilantro-jalapeño purée and fresh lime juice. Add buttermilk, a little at a time, to reach desired consistency. Refrigerate until ready to serve.
  5. Cook the Smash Burgers: Divide ground beef into six equal portions (about 3.5 oz each). Press each portion thinly and evenly onto one side of a flour tortilla, slightly overlapping the edges. Season with salt and pepper.
  6. Heat a griddle or large skillet over high heat. Place tortillas, meat side down, on the hot surface. Press firmly with a spatula or burger press. Cook undisturbed for 2–3 minutes, until browned and crisp. Carefully flip and cook for another 1–2 minutes.
  7. Assemble the Tacos: Remove burgers from the skillet. Top each with a generous scoop of Street Corn Topping and drizzle with Creamy Jalapeño Sauce. Add hot sauce and extra cotija cheese, if desired.
  8. Serve immediately and enjoy!

Cook’s Notes

  • Street corn topping and jalapeño sauce can be made 1–2 days ahead and refrigerated.
  • Adjust spice levels to taste by varying Jalapeño and chili powder amounts.
  • Use fresh lime juice for best flavor.

Serving Suggestions

  • Serve these tacos with a simple side salad of fresh greens tossed in a light lime vinaigrette to balance the richness.
  • For a heartier meal, add a side of crispy seasoned fries or grilled Mexican street corn on the cob.
  • Garnish with extra lime wedges and fresh cilantro for added brightness.

Beverage Pairings

  • Classic Margarita: The tangy lime and tequila complement the creamy jalapeño sauce and smoky corn beautifully.
  • Mexican Lager: A light, crisp beer like Corona or Modelo balances the spicy and savory flavors without overpowering them.
  • Agua Fresca: Refreshing fruit drinks like watermelon or cucumber lime agua fresca are perfect for a non-alcoholic option.
  • Sparkling Water with Lime: Simple and refreshing to cleanse the palate between bites.
