A hearty Southern twist on enchiladas, perfect for brunch or breakfast-for-dinner. Scrambled eggs, crispy tater tots, cheese, and sausage are rolled into tortillas and smothered with a rich, creamy sausage gravy. Comfort food doesn’t get much better than this.
Ingredients
For the Sausage Gravy
- 1 lb ground breakfast sausage
- 1/2 cup diced onion
- 1 Jalapeño, finely chopped (optional)
- 1/3 cup all-purpose flour
- 2 3/4 cups milk
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
For the Enchiladas
- 10 large eggs
- 2 Tablespoons butter
- 2 cups cooked tater tots
- 1 cup shredded cheddar cheese
- 1 cup shredded Pepper Jack cheese
- 10 fajita-size flour tortillas
Preparation
- Make the Sausage Gravy: In a large skillet over medium heat, cook the sausage until halfway browned.
- Add the onion and Jalapeño (if using). Continue cooking until sausage is fully browned and vegetables are soft.
- Remove about 1 cup of the sausage mixture and set aside for the filling.
- Sprinkle the flour over the remaining sausage in the skillet. Stir and cook for 1 minute.
- Gradually whisk in the milk. Continue stirring and cook until the gravy thickens, about 5–7 minutes.
- Season with salt and pepper. Remove from heat and set aside.
- Prepare the Eggs: In a medium bowl, beat the eggs with a pinch of salt.
- Melt butter in a large nonstick skillet over medium heat.
- Scramble the eggs until just cooked but still moist. Remove from heat.
- Assemble the Enchiladas: Preheat oven to 350°F. Lightly grease a 9×13-inch baking dish.
- In a large bowl, combine scrambled eggs, cooked tater tots, reserved sausage mixture, and half of each cheese.
- Divide the filling evenly among the tortillas. Roll each one tightly and place seam-side down in the prepared baking dish.
- Top and Bake: Pour the sausage gravy evenly over the rolled enchiladas.
- Sprinkle with the remaining cheddar and Pepper Jack cheese. Bake uncovered for 30–40 minutes, or until the cheese is melted and bubbly.
- Serve: Let rest for 5 minutes before serving.
- Optional: Garnish with chopped parsley, green onions, or hot sauce.
Cook’s Notes
This dish is perfect for prepping in advance. Assemble the enchiladas completely—filling, rolling, and covering with gravy and cheese—then cover tightly with foil and refrigerate overnight. When ready to bake, let the dish sit at room temperature for 20–30 minutes while the oven preheats. Bake as directed, adding 5–10 minutes to the baking time if needed to ensure it’s heated through and bubbling.
