  • 1 lb small or medium shrimp, peeled and deveined
  • 2 Tablespoons unsalted butter
  • 1/2 cup finely diced white onion
  • 1 poblano pepper, roasted, peeled, seeded, and diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Zest and juice of 1/2 lime
  • Salt and freshly ground pepper, to taste
  • 2 Tablespoons chopped fresh cilantro

Poblano-Cream Sauce

  • 3 Tablespoons unsalted butter
  • 3 Tablespoons all-purpose flour
  • 1 1/2 cups low-sodium chicken stock
  • 1/2 roasted poblano, minced
  • 3/4 cup full-fat sour cream
  • 1 cup shredded Monterey Jack cheese
  • Salt and white pepper, to taste

Assembly & Garnish

  • 8 to 10 flour tortillas (6–8 inches)
  • 1 cup additional Monterey Jack cheese, shredded
  • 1/4 cup sour cream
  • 1 Tablespoon lime juice
  • Zest of 1/2 lime
  • 2 Tablespoons toasted pepitas or chopped pecans
  • Micro-cilantro leaves, for garnish
  • Thinly sliced radish or Jalapeño, optional

Preparation

  1. Prepare the Filling: In a large skillet, melt 2 Tablespoons butter over medium heat.
  2. Add onion, roasted poblano, and garlic. Sauté until soft and fragrant, about 3 minutes.
  3. Stir in cumin and smoked paprika.
  4. Add shrimp and cook just until opaque, about 2 minutes.
  5. Remove from heat. Stir in lime zest, lime juice, chopped cilantro, and season to taste with salt and pepper. Set aside.
  6. Make the Poblano-Cream Sauce: In a saucepan, melt 3 Tablespoons butter over medium heat.
  7. Whisk in flour and cook for 1 to 2 minutes, stirring constantly, until the mixture smells nutty and begins to turn golden.
  8. Gradually whisk in chicken stock and continue whisking until thickened and smooth.
  9. Stir in minced roasted poblano and simmer for 2 minutes.
  10. Remove from heat. Whisk in sour cream and cheese until melted.
  11. Season with salt and white pepper.
  12. Assemble the Enchiladas: Preheat oven to 375°F. Lightly grease a 9×13-inch baking dish.
  13. Warm tortillas until pliable. Place about 1/3 cup of the shrimp filling into each tortilla, roll tightly, and place seam-side down in the prepared dish.
  14. Top and Bake: Pour poblano-cream sauce evenly over enchiladas. Sprinkle with 1 cup additional cheese.
  15. Bake for 20 to 25 minutes, until bubbly and lightly golden.
  16. Garnish and Serve: In a small bowl, mix sour cream, lime juice, and lime zest to create lime crema. Drizzle over enchiladas before serving.
  17. Garnish with micro-cilantro, toasted pepitas or pecans, and optional radish or Jalapeño slices.

Serving Suggestions

  •  Cilantro-Lime Rice — A fragrant, fluffy side with bright citrus notes to balance the richness of the cream sauce.
  • Charred Corn Esquites — Toasted corn tossed with Cotija cheese, lime, and chili powder for a sweet and smoky contrast.
  • Crisp Greens with Citrus Vinaigrette — A simple salad of arugula, shaved fennel, and grapefruit segments dressed with a light vinaigrette to refresh the palate.
  • Avocado-Radish Slaw — Creamy avocado meets crunchy radish and cabbage in a tangy lime dressing — adds texture and coolness to the plate.
  • Roasted Sweet Potatoes with Pepitas — Oven-roasted rounds with a sprinkle of smoked paprika and toasted pepitas echo the dish’s earthy tones.

Drink Pairings

  • Sauvignon Blanc or Albariño — Crisp, citrusy white wines to cut through the creamy sauce and highlight the shrimp.
  • Agave Margarita with Smoked Salt Rim — A slightly smoky margarita complements the poblano and cumin flavors beautifully.
  • Light Mexican Lager or Pilsner — Clean and refreshing, especially if you add a hint of heat with Pepper Jack cheese or sliced Jalapeños.
