Carter Family Recipes

A bold and creamy coffee ice cream with deep-roasted flavor, swirled with thick ribbons of rich chocolate fudge and studded with dark chocolate espresso flakes. It’s everything a coffee lover wants in a frozen dessert—caffeinated, velvety, and unapologetically decadent.

Ingredients

Ice Cream Base

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 4 large egg yolks
  • 2 Tablespoons instant espresso powder (or strong instant coffee)
  • 1 teaspoon vanilla extract

Add-Ins

  • 1/2 cup dark chocolate chunks or shavings
  • 1/2 cup chocolate fudge sauce (homemade or store-bought), slightly warmed
  • 2 teaspoons finely ground espresso beans (optional, for extra bite)

Preparation

  1. Make the Custard Base: In a medium saucepan, whisk together the cream, milk, sugar, salt, and espresso powder. Heat over medium until just steaming—not boiling.
  2. In a separate bowl, whisk the egg yolks. Slowly ladle 1/2 cup of the hot mixture into the yolks while whisking constantly (to temper), then pour the yolk mixture back into the pan.
  3. Cook over medium-low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (170–175°F). Remove from heat. Stir in vanilla extract.
  4. Chill Thoroughly: Pour the custard into a bowl and chill in the refrigerator for at least 4 hours (or overnight) until very cold.
  5. Churn the Ice Cream: Pour the chilled base into an ice cream maker and churn according to the manufacturer’s instructions, usually 20–25 minutes.
  6. In the last few minutes of churning, add the chocolate chunks and ground espresso (if using).
  7. Swirl in Fudge: Transfer the churned ice cream to a freezer-safe container, layering in ribbons of chocolate fudge sauce as you go. Use a knife to gently swirl it—but don’t overmix.
  8. Freeze to Firm: Cover and freeze for at least 4 hours or until scoopable.

Serving Suggestions

  • Serve in a waffle cone with a dusting of cocoa powder
  • Top with a dollop of whipped cream and a chocolate-covered espresso bean
  • Drizzle with more fudge sauce if you dare
