Bursting with the pure, sun-ripened flavor of fresh summer strawberries, these popsicles are a celebration of everything sweet, tart, and refreshing. By combining fresh strawberries with strawberry jam—and optionally a dusting of freeze-dried strawberry powder—you get maximum berry flavor with a silky, luscious texture that’s anything but icy. This recipe is simple, quick, and delivers what might be the most intense strawberry popsicle you’ve ever tasted.
Ingredients
- 1 pound (about 3 1/2 cups) fresh strawberries, hulled and halved
- 1/3 cup granulated sugar
- 2 Tablespoons strawberry jam (high-quality or homemade)
- 1 Tablespoon lemon juice (freshly squeezed)
- 1 Tablespoon freeze-dried strawberry powder (optional, but highly recommended for flavor boost)
Preparation
- Purée the strawberries: In a blender or food processor, combine the strawberries, sugar, strawberry jam, lemon juice, and (if using) freeze-dried strawberry powder. Blend until completely smooth.
- Taste and adjust: Taste the purée and adjust for sweetness or acidity, adding a bit more sugar or lemon juice if needed.
- Strain (optional): For a smoother texture, strain the mixture through a fine-mesh sieve to remove seeds. This step is optional depending on your preference.
- Fill molds: Pour the purée into popsicle molds, leaving a bit of space at the top to allow for expansion during freezing.
- Insert sticks and freeze: Insert popsicle sticks and freeze until solid, at least 4–6 hours or overnight.
- Unmold and serve: To release the popsicles, run warm water over the outside of the molds for a few seconds. Serve immediately and enjoy!
Cook’s Notes
- Makes six 3-ounce popsicles.
- For a swirl effect, gently stir in 1–2 teaspoons of extra jam into each mold before freezing.
- These popsicles keep well in the freezer for up to 2 weeks, tightly wrapped.
