Bold, fire-roasted poblanos packed with spicy Hatch Green Chile Tamales, sweet corn, and melty Oaxaca cheese—topped with a creamy, smoky, and spicy chipotle-lime sauce that bites back (in a good way).

Ingredients

For the Chiles

  • 6 fresh poblano chiles
  • 6 hot Hatch Green Chile Tamales (fully cooked)
  • 1/2 cup roasted corn kernels (fresh or frozen)
  • 1 fresh Jalapeño, finely diced (seeds in for extra heat)
  • 3/4 cup grated Oaxaca cheese (or mozzarella)

For the Double Chipotle Crema

  • 1/2 cup Mexican crema
  • 2 chipotle peppers in adobo, finely minced
  • 1 Tablespoon adobo sauce
  • Juice of 1/2 lime
  • Salt to taste

For Wrapping and Garnish

  • Corn husks (soaked in warm water for 30 minutes)
  • Thinly sliced red onion
  • Fresh cilantro (optional)
  • Lime wedges
  • Optional: sprinkle of Tajín or crushed chile piquín on top for extra kick

Preparation

  1. Roast the Chiles: Char the poblano chiles over an open flame or under a broiler until blackened and blistered all over—about 6-8 minutes. Place in a plastic bag or covered bowl to steam for 10 minutes. Peel off skins, slit lengthwise, and remove seeds and veins. Set aside.
  2. Prepare the Filling: Crumble the spicy Hatch Green Chile Tamales into a bowl. Add roasted corn, diced Jalapeño, and half of the grated Oaxaca cheese. Mix gently to combine.
  3. Make the Double Chipotle Crema: Stir together Mexican crema, minced chipotles, adobo sauce, lime juice, and a pinch of salt. Taste—if you feel like your tongue isn’t sweating yet, add another spoon of adobo.
  4. Stuff the Chiles:
Spoon the spicy tamale filling into each poblano. Drizzle about 1 Tablespoon of chipotle crema over the filling. Top each with the remaining Oaxaca cheese.
  5. Bake the Chiles: Preheat oven to 350°F (180°C). Arrange stuffed chiles on a parchment-lined baking sheet. Bake for 12-15 minutes or until cheese is melted and starting to brown at the edges.
  6. Wrap and Serve: Wrap each chile in a warm, soaked corn husk for presentation. Top with extra chipotle crema, red onion slices, and a sprinkle of Tajín or chile piquín if you want even more bite. Serve warm with lime wedges.

Cook’s Note

For serious heat lovers: substitute Serrano for Jalapeño, or add a dash of ghost pepper hot sauce to the crema (just don’t blame me if you can’t feel your face).
