These tacos marry the spicy, cheesy charm of a Jalapeño popper with the crispy, savory satisfaction of a smashed burger. Each tortilla is griddled with a thin layer of beef, Jalapeños, and cheese, then topped with smoky bacon, tangy lime crema, and fresh lettuce. Creamy, crunchy, spicy, and utterly addictive.
Ingredients
Beef & Tortillas
- 6 slices bacon, cooked crisp and crumbled
- 1 lb ground sirloin or ground round
- 1/2 cup finely chopped Jalapeños (seeded for less heat, or leave seeds for extra punch)
- 1/2 teaspoon garlic powder
- 3/4 teaspoon salt
- 1 1/2 cups shredded Cheddar cheese, divided
- 10 (6-inch) flour tortillas
Lime Crema & Toppings
- 2 Tablespoons cream cheese, softened
- 1/2 cup sour cream
- 1 Tablespoon fresh lime juice
- 1/4 cup chopped cilantro
- 1 cup shredded lettuce
Preparation
- Cook the Bacon: In a skillet over medium-high heat, cook bacon until crisp, about 7 minutes. Transfer to a paper towel–lined plate to drain, then crumble.
- Mix the Beef Filling: In a large bowl, combine ground beef, chopped Jalapeños, garlic powder, salt, crumbled bacon, and 3/4 cup of the Cheddar cheese.
- Heat the Cooking Surface: Warm a griddle or large skillet over medium-high heat.
- Assemble & Smash: Spread a thin layer of the beef mixture evenly over one side of each tortilla, all the way to the edges. Place tortilla beef-side down on the hot griddle and press down firmly to smash the meat into a thin layer. Cook until the beef is browned and crispy, about 3–4 minutes. Flip and cook 1–2 minutes more until tortilla is lightly golden.
- Make the Lime Crema: In a small bowl, whisk together cream cheese, sour cream, and lime juice until smooth.
- Finish & Serve:
Sprinkle each taco with some of the remaining Cheddar cheese. Top with shredded lettuce, a drizzle of lime crema, and chopped cilantro. Serve immediately while hot and crispy.
