Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup Whipped Cream
  • 1 cup packed brown sugar
  • 1/2 cup light corn syrup
  • 4 Tablespoon unsalted butter
  • 2 large eggs, beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups chopped pecans
  • 1 1/2 cups whipped cream (for topping)
  • 1/4 cup chopped pecans, for garnish
  • Caramel sauce, for drizzling

Preparation

  1. Prepare the crust: In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter until well mixed.
  2. Press firmly into the bottom of a 9×13-inch baking dish.
  3. Refrigerate for 20 minutes to set.
  4. Make the cheesecake layer: In a mixing bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  5. Gently fold in whipped cream.
  6. Spread one half of the cheesecake mixture evenly over the chilled crust and refrigerate while preparing the next layer.
  7. Cook the pecan layer: In a medium saucepan over medium heat, combine brown sugar, corn syrup, butter, and beaten eggs.
  8. Cook, stirring constantly, until the mixture thickens slightly (about 5 minutes).
  9. Remove from heat, then stir in vanilla extract and chopped pecans.
  10. Let cool slightly.
  11. Assemble the lasagna: Spread one half of the cooled pecan mixture evenly over the cheesecake layer.
  12. Refrigerate for at least 30 minutes to firm up.
  13. Repeat with second layer of cheesecake and pecan mixtures.
  14. Add the topping: Spread the remaining whipped cream evenly over the pecan layer.
  15. Garnish with chopped pecans and drizzle with caramel sauce.
  16. Chill and serve: Refrigerate for at least 2–3 hours, or overnight, until the layers are fully set. Slice into squares and serve chilled.

Cook’s Notes

  • For the creamiest texture, chill overnight before serving.
  • Try substituting gingersnaps or vanilla wafers for the graham cracker crust for extra flavor.
  • Add a pinch of cinnamon to the pecan filling to enhance the warmth of the dessert.
