Carter Family Recipes

A show-stopping appetizer that looks as good as it tastes. Creamy avocado layered with tender shrimp, bright lime, and fresh herbs creates a sophisticated flavor profile. Perfect for dinner parties, brunches, or any occasion where presentation matters.

Ingredients

  • 1 lb. shrimp, peeled and deveined
  • 2 ripe avocados
  • 2 Tablespoon Greek yogurt or cream cheese
  • Juice of 1 lime
  • 1 small garlic clove, finely grated
  • 2 Tablespoon olive oil
  • Salt and black pepper, to taste
  • Fresh dill or parsley, finely chopped
  • Red onion, very finely minced (optional)
  • Microgreens or edible flowers for garnish (optional)
  • Lime wedges, for serving

Preparation

  1. Heat olive oil in a pan over medium heat. Cook the shrimp just until they turn pink, about 2–3 minutes per side. Remove and allow to cool so they stay tender.
  2. Mash avocados with Greek yogurt (or cream cheese), lime juice, grated garlic, salt, and black pepper until smooth and creamy.
  3. Spoon or pipe the avocado mixture into clear glasses, creating an even base layer. Using a piping bag or small spoon adds a polished look.
  4. Arrange shrimp neatly on top of the avocado, alternating directions for visual appeal.
  5. Sprinkle with fresh dill or parsley, a touch of finely minced red onion, and optional microgreens or edible flowers for a refined touch.
  6. Chill for 10–15 minutes to meld flavors, or serve immediately. Garnish with lime wedges.

Presentation Tips:

  • Serve in clear shot glasses, mini dessert glasses, or small mason jars to showcase the layers.
  • Use a tiny sprig of dill or an edible flower atop each parfait to elevate the visual impact.
  • Pair with a crisp white wine or sparkling water for an elegant touch.
