A quick, naturally thickened blueberry jam made with frozen blueberries and chia seeds. Lightly sweet, fresh tasting, and perfect for spooning over yogurt, oatmeal, or toast.
Ingredients
- 2 cups frozen blueberries
- 2 Tablespoon water
- 1–2 Tablespoon honey or maple syrup, to taste
- 1 Tablespoon chia seeds
- 1 teaspoon lemon juice
- 1/4 teaspoon vanilla extract (optional)
Preparation
- Add frozen blueberries and water to a small saucepan. Cook over medium heat, stirring occasionally, until the berries release their juices and begin to burst, about 5–7 minutes.
- Lightly mash the blueberries with a spoon or potato masher, leaving some texture if desired.
- Stir in honey or maple syrup, lemon juice, and vanilla extract (if using).
- Remove from heat and stir in chia seeds until fully incorporated.
- Let the mixture rest for 10–15 minutes to thicken. Stir once more before using.
- Spoon over yogurt immediately, or transfer to a jar and refrigerate until chilled.
Cook’s Notes
- The jam will continue to thicken as it cools.
- Keeps refrigerated for up to 5 days.
- Excellent layered with Greek yogurt and granola.
