Ingredients
- 1 cup long-grain white rice (uncooked)
- 2 cups water or chicken/vegetable broth
- 1/2 teaspoon salt (adjust to taste)
- 1 Tablespoon butter (plus more if you love it extra buttery)
- 1 cup sweet corn kernels (fresh, frozen, or canned)
- 1 clove garlic, minced
- 1/4 teaspoon black pepper
- 1 Tablespoon chopped green onions or parsley (optional garnish)
Optional
- Parmesan cheese
- red pepper flakes
- smoked paprika
Preparation
- Cook the Rice: In a medium saucepan, combine rice, water or broth, and salt. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes until tender and liquid is absorbed. Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork.
- Make the Buttered Corn: In a skillet over medium heat, melt the butter. Add garlic and cook about 30 seconds until fragrant. Stir in corn and black pepper. Cook 3–5 minutes until the corn is hot and lightly golden.
- Combine & Serve; Add the buttered corn mixture to the rice and gently stir. Taste and adjust salt or butter as needed. Sprinkle with green onions or parsley before serving.
