These Steamed Pork & Wonton Ramekin Dumplings are a cozy, no-fold twist on classic Chinese dumplings. Layers of savory pork filling and tender wonton wrappers steam together into a soft, juicy, spoonable dumpling that eats like a cross between shumai and a savory custard. Ginger, garlic, mushrooms, and napa cabbage bring depth and balance, while a touch of baking soda (optional but recommended) keeps the pork light and fluffy. Finished with chili oil and green onions, this dish is comforting, aromatic, and surprisingly elegant straight from the ramekin.
Ingredients
- 1 Pound ground pork
- 1 Cup napa cabbage, finely chopped
- 3 green onions, finely sliced
- 1 Tablespoon fresh ginger, minced
- 2 cloves garlic, mashed
- 6 mushrooms, finely chopped
- 1/2 teaspoon baking soda (optional, recommended for a fluffier texture)
- 2 Tablespoon sesame oil
- 2 Tablespoon mirin (or Shaoxing wine)
- 2 Tablespoon oyster sauce
- 1/4 Cup low-sodium soy sauce
- 1 package wonton wrappers
- 1/3 Cup water (per ramekin)
- Green onions, sliced (for garnish)
- Chili oil (for garnish)
Preparation
- In a large bowl, combine the ground pork, napa cabbage, green onions, ginger, garlic, mushrooms, baking soda (if using), sesame oil, mirin, oyster sauce, and soy sauce. Mix gently with your hands or a fork until well combined.
- Lightly oil heat-safe ramekins or mugs. Add a spoonful of the pork mixture to the bottom, followed by a wonton wrapper. Continue layering filling and wonton wrappers, pressing gently, until the ramekin is nearly full.
- Before the final layer, pour 1/3 Cup water into each ramekin. Top with two wonton wrappers to seal in moisture.
- Place the ramekins in a Dutch oven or large pot. Add hot water until it reaches halfway up the sides of the ramekins. Cover with a lid.
- Steam over medium heat for 20 minutes, or until the pork is fully cooked and the wonton wrappers are tender.
- Carefully remove from the steamer. Finish with chili oil and sliced green onions. Serve warm directly from the ramekin.
