Ingredients
- 1 lb ground chicken (or turkey or pork)
- 1 medium onion, diced
- 3–4 cloves garlic, minced
- 3 carrots, sliced or shredded
- 1 small head green cabbage, chopped
- 6–8 cups chicken broth
- 1–2 Tablespoons soy sauce or coconut aminos
- 1 teaspoon ground ginger (optional)
- Salt, to taste
- Black pepper, to taste
- Sliced green onions or sesame seeds, for garnish (optional)
Preparation
- Brown the meat: Heat a large pot over medium heat. Add the ground meat and cook until no longer pink, breaking it up as it cooks.
- Add the vegetables: Stir in the onion, garlic, carrots, and cabbage. Cook for several minutes until the vegetables begin to soften and release their aroma.
- Add broth and seasoning: Pour in the chicken broth, soy sauce (or coconut aminos), and ground ginger if using. Stir to combine.
- Simmer: Bring the soup to a gentle boil, then reduce heat and simmer for 15–20 minutes, until the vegetables are tender and the flavors are well blended.
- Serve: Ladle into bowls and garnish with sliced green onions or sesame seeds if desired. Serve hot.
