Carter Family Recipes

This slow cooker creamy cabbage is a humble, comforting dish that transforms simple ingredients into something quietly luxurious. Green cabbage slowly softens in a buttery vegetable broth, infused with thyme, garlic, and a hint of nutmeg. Finished with heavy cream and Parmesan, the result is tender, silky, and deeply savory — perfect as a cozy side dish or a simple main when comfort is the goal.

Ingredients

  • 1 medium green cabbage, chopped
  • 1 medium onion, sliced
  • 3 cloves garlic, minced

Creamy Broth

  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 2 Tablespoon butter
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground nutmeg
  • Salt and black pepper, to taste

Finish

  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped, for garnish

Preparation

  1. Add the chopped cabbage to the slow cooker. Top evenly with the sliced onion and minced garlic.
  2. Pour in the vegetable broth. Add the butter, thyme, nutmeg, salt, and black pepper. Stir gently to combine.
  3. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the cabbage is very tender.
  4. About 30 minutes before serving, stir in the heavy cream and Parmesan cheese. Cover and allow to heat through.
  5. Taste and adjust seasoning as needed. Garnish with fresh parsley before serving.

Cook’s Notes

  • Stir gently to help the cabbage retain some texture.
  • Adding extra Parmesan will thicken the sauce and deepen the savory flavor.
  • A pinch of white pepper can be substituted for black pepper for a softer finish.

Serving Suggestions

  • Serve alongside roasted chicken, pork loin, or meatloaf.
  • Spoon over rice, mashed potatoes, or buttered egg noodles for a heartier meal.
  • Add crusty bread or garlic toast to soak up the creamy broth.

Beverage Suggestions

  • A dry white wine such as Chardonnay or Pinot Grigio pairs well with the creamy base.
  • Sparkling water with lemon balances the richness nicely.
  • For a cozy option, serve with hot tea or a light vegetable broth on the side.
