Carter Family Recipes

This is the kind of breakfast that doesn’t whisper “good morning” — it kicks the door open. Soft scrambled eggs, melty cheddar jack, and flour tortillas are rolled up and blanketed in rich sausage gravy, then baked until bubbling. Perfect for feeding a crowd, a holiday morning, or anyone who believes breakfast should come with a nap afterward.

Ingredients

  • 12 large eggs
  • 1/3 cup milk
  • Salt
  • Black pepper
  • 3 Tablespoon butter
  • 2 cups Cheddar Jack cheese, shredded
  • 10 ounces breakfast sausage
  • 1/4 cup all-purpose flour
  • 2 cups half-and-half
  • 1/2 cup milk
  • 8 (8-inch) flour tortillas

Preparation

  1. Preheat oven to 375°F. Lightly grease a 9×13 baking dish.
  2. In a large bowl, whisk together eggs and 1/3 cup milk. Season with Salt and Black pepper.
  3. Melt butter in a large skillet over medium heat. Add eggs and cook gently, stirring often, until just set but still soft. Remove from heat.
  4. In another skillet, brown the breakfast sausage over medium heat until fully cooked and the fat has rendered. Do not drain.
  5. Sprinkle flour over the sausage and stir to combine, cooking for about 1 minute to remove the raw flour taste.
  6. Gradually pour in half-and-half and 1/2 cup milk, stirring constantly. Cook until thickened into a smooth gravy.
  7. Divide scrambled eggs evenly among the tortillas. Sprinkle each with Cheddar Jack cheese. Roll tightly and place seam-side down in the prepared baking dish.
  8. Pour sausage gravy evenly over the tortillas. Cover with foil.
  9. Bake for 20–25 minutes, until hot and bubbling.
  10. Let rest 5 minutes before serving.

Serving Suggestions

Serve with fresh fruit to balance the richness or a simple avocado and tomato salad for contrast. A spoonful of salsa or a few slices of Jalapeño on top add a little heat if you like things lively.

Beverage Suggestions

Strong hot coffee is the obvious partner. For brunch, a Bloody Mary or a crisp mimosa pairs beautifully with the savory sausage gravy.

Cook’s Notes

  • For extra golden tops, remove foil during the last 5 minutes of baking.
  • Pepper Jack can replace Cheddar Jack for more spice.
  • This dish can be assembled the night before, covered, and refrigerated. Add 5–10 minutes to baking time if starting cold.
