A bold twist on classic peanut brittle, this Jalapeño Peanut Brittle delivers crisp caramelized sugar, toasted peanuts, and a subtle heat that builds with every bite. The sweetness balances the spice, creating a candy that’s perfect for gifting, entertaining, or adding a gourmet touch to dessert boards.

Ingredients

  • 2–3 fresh Jalapeño peppers, seeded and finely diced
  • 2 cups granulated sugar
  • 1/2 cup water
  • 1 cup light corn syrup
  • 2 cups salted peanuts
  • 2 Tablespoons unsalted butter
  • 2 teaspoons baking soda
  • 1 teaspoon pure vanilla extract

Preparation

  1. Prepare the Pan: Line a 9×13-inch baking pan with parchment paper or lightly grease a rimmed baking sheet. Set aside.
  2. Start the Sugar Base: In a heavy-bottomed saucepan over medium heat, combine sugar, water, and corn syrup. Stir until the sugar dissolves and the mixture begins to boil.
  3. Cook to Soft Crack Stage: Attach a candy thermometer to the side of the pan. Cook, stirring occasionally, until the mixture reaches 250°F.
  4. Add Peanuts and Jalapeño: Stir in the peanuts and diced Jalapeño. Continue cooking, stirring constantly, until the mixture reaches 300°F (hard crack stage).
  5. Finish the Brittle: Immediately remove from heat. Quickly stir in the butter, baking soda, and vanilla extract. The mixture will foam and lighten in color.
  6. Spread and Cool: Pour the hot mixture onto the prepared pan. Spread thinly with a heatproof spatula as quickly as possible. Allow to cool completely at room temperature, about 1 hour.
  7. Break and Store: Once fully hardened, break into pieces. Store in an airtight container at room temperature for up to 2 weeks.

Cook’s Notes

  • Use gloves when handling Jalapeños to avoid irritation.
  • For milder heat, use 1–2 peppers and remove all seeds and membranes. For more spice, leave in some seeds.
  • Humidity can affect texture. For best results, make brittle on a dry day.
  • Work quickly once the mixture reaches 300°F, as it sets fast.

Serving Suggestions

  • Serve alongside dark chocolate for a sweet-heat contrast.
  • Add shards to vanilla ice cream for texture and spice.

  • Include on a charcuterie board for a surprising crunchy element.
