Inspired by the refined French omelette technique featured in The Bear and adapted from Tasting Table, this Boursin omelette is luxuriously soft, delicately folded, and filled with creamy, herb-infused cheese. The eggs are strained for a silky texture, gently stirred to form fine curds, and finished with crushed potato chips for an unexpected crunch. The result is elegant yet playful — a restaurant-style omelette you can make at home.
Ingredients
- 3 large eggs
- 2 Tablespoons unsalted butter, divided
- 2 to 3 Tablespoons Boursin Shallot & Chive cheese
- 2 teaspoons fresh chives, finely chopped, divided
- 1/4 cup crushed potato chips (such as sour cream and onion)
- Freshly cracked black pepper, to taste
Preparation
- Crack the eggs into a fine mesh sieve set over a bowl. Gently stir or press through using a spatula to remove any thick strands. Add 1 teaspoon chopped chives and whisk until fully blended and smooth.
- Heat a nonstick skillet over medium heat. Add 1 1/2 Tablespoons butter and swirl to coat the pan evenly.
- Pour the eggs into the skillet. Using a rubber spatula, continuously stir while gently shaking the pan to create very small, delicate curds. Keep the eggs moving to prevent browning.
- When the eggs are mostly set but still glossy and slightly loose on top, spoon or pipe the Boursin in a line along one side of the omelette. Turn off the heat.
- Add the remaining 1/2 Tablespoon butter near the edge to help with folding.
- Carefully fold the omelette over the cheese into a tight oval or torpedo shape. Tilt the pan and gently roll the omelette onto a plate, seam side down.
- Sprinkle with remaining chives, crushed potato chips, and freshly cracked black pepper. Serve immediately.
Cook’s Notes
- Do not allow the eggs to brown; a proper French-style omelette should remain pale and tender.
- Straining the eggs creates a smoother, more refined texture.
- For extra richness, warm the Boursin slightly before adding so it melts more evenly.
- If you prefer less crunch, lightly crush the chips so they add texture without overwhelming the omelette.
Serving Suggestion
Serve with lightly dressed arugula and toasted sourdough for balance.
Beverage Pairing
A crisp sparkling water with lemon or a chilled glass of dry Champagne complements the richness beautifully.
