Carter Family Recipes

A bold, smoky, and spice-forward chicken loaf inspired by Cajun flavors. Built for the ham press, this loaf features a tight deli-style slice with peppers, herbs, and classic Cajun seasoning. It delivers a balance of heat, savoriness, and subtle smokiness with a clean, sliceable texture.

Ingredients

Meat Base

  • 2 lbs boneless skinless chicken thighs
  • 1 lb boneless skinless chicken breast

Binding & Liquid

  • 1 Tablespoon kosher salt
  • 1 teaspoon curing salt (optional, for color and deli-style texture)
  • 1/2 cup ice-cold chicken stock

Cajun Seasoning Blend

  • 1 teaspoon smoked paprika
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon white pepper
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano

Aromatics & Add-ins

  • 4 Jalapeño, finely diced (optional for extra heat)
  • 1/2 cup diced green bell pepper
  • 1/3 cup diced celery (classic Cajun “holy trinity” component)
  • 2 Tablespoons chopped green onion
  • 1 Tablespoon fresh parsley, chopped
  • 1 teaspoon Worcestershire sauce

Optional (for improved structure)

  • 1 teaspoon unflavored gelatin, bloomed in 2 Tablespoons cold stock

Preparation

  1. Grind the Chicken: Using a meat grinder or grinder attachment:
    • Coarse grind: all chicken breast + half the thighs
    • Fine grind: remaining thighs. This creates a balance of structure and binding.
  2. Build the Bind: Combine the finely ground chicken with kosher salt (and curing salt if using). Mix vigorously until the mixture becomes sticky and tacky. Gradually add ice-cold chicken stock (and bloomed gelatin if using), mixing until fully incorporated.
  3. Combine All Ingredients: Fold in the coarse-ground chicken. Add Cajun seasoning, Worcestershire sauce, and aromatics. Mix until evenly distributed and slightly tacky.
  4. Pack the Ham Press: Layer the mixture into the ham press firmly. Press down between layers to remove air pockets. Compress fully using the lid and spring mechanism.
  5. Cook (Water Bath Method): Place the press in a pot of water. Maintain water level at approximately 2/3 the height of the press. Heat water to 152–155°F and hold steady. Cook for 2.5–3 hours, depending on thickness.
  6. Cool and Set: Remove from heat and allow to cool slightly. Optional: place in an ice bath for 20–30 minutes. Refrigerate overnight in the press to fully set and compress.
  7. Slice Serve: Remove from press and slice thin for deli-style presentation.
  8. Serve cold or lightly seared in a pan for enhanced flavor and texture.

Cook’s Notes

  • The Cajun flavor improves after resting overnight as the spices meld.
  • Adjust cayenne to control heat level; Cajun profiles can range from mild to very spicy.
  • Keeping the mixture cold during preparation is critical for proper binding.
  • If the loaf seems too loose, ensure adequate mixing of the finely ground portion—this is the primary binder.
  • For a smokier profile, consider lightly smoking the mixture before pressing or adding a small amount of smoked paprika.

This loaf works well sliced for sandwiches, served alongside rice dishes, or pan-seared and paired with creamy sauces or aioli.
