Creamy Canary beans built on a garlic-forward base, layered with smooth smoke from Tabasco Chipotle Pepper Sauce, and finished with bright lime. This version keeps the heat clean and controlled—rich without being heavy, smoky without turning muddy.

Ingredients

  • 1 lb dried Canary beans, rinsed and sorted
  • 7 cups water or low-sodium chicken broth
  • 1 medium yellow onion, finely diced
  • 1 green bell pepper, finely diced
  • 6–8 cloves garlic, minced
  • 2 Tablespoons olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • 1 bay leaf
  • 1 to 2 Tablespoons Tabasco Chipotle Pepper Sauce (to taste)
  • 1/2 to 1 teaspoon lime-pepper seasoning
  • 1/4 to 1/2 teaspoon MSG (to taste)
  • 1/2 teaspoon black pepper
  • Zest of 1 lime
  • 2 Tablespoons fresh lime juice (plus more to taste)
  • 1 to 1 1/2 teaspoons salt (adjust to taste)
  • Optional: 2–4 oz diced smoked meat (ham or bacon)

Preparation

  1. Optional Soak: Soak beans overnight for best texture.
If skipping, increase cook time (see below).
  2. Build the Flavor Base: Set Instant Pot to Sauté (Normal).
  3. Add olive oil, onion, and bell pepper. Cook 5–7 minutes until softened.
  4. Add garlic, cumin, oregano. Cook 1–2 minutes until fragrant.
  5. Bloom the Chipotle Flavor: Stir in 1 Tablespoon Tabasco Chipotle Sauce and cook 30–60 seconds to infuse the oil.
  6. Deglaze: Add a splash of liquid and scrape up any browned bits from the bottom.
  7. Add Beans and Liquid: Add beans, remaining liquid, bay leaf, and optional smoked meat.
  8. Stir well.
  9. Pressure Cook:
    • Soaked beans: High Pressure – 25 minutes
    • Unsoaked beans: High Pressure – 40 minutes
  10. Natural Release: Let pressure release naturally for 15–20 minutes, then quick release.
  11. Finish and Brighten: Remove bay leaf.
  12. Stir in lime zest and lime juice.
  13. Add lime-pepper seasoning, black pepper, salt, and MSG (start low).
  14. Dial in Smoke & Heat: Taste and add more Tabasco Chipotle Sauce (up to 2 Tablespoons total) as needed.
  15. Create Creamy Texture: Mash a portion of the beans and stir back in.
  16. Optional Final Simmer: Set to Sauté (Low) for 5–10 minutes to thicken.

Cook’s Notes

  • Tabasco Chipotle Sauce brings smoke + vinegar, so go easy on additional acid until final tasting.
  • Start with 1 Tablespoon and build—easy to add, impossible to take back.
  • MSG should enhance, not stand out—add in small increments.
  • If the beans feel too bold, add a splash of hot water and rebalance with lime.
  • Resting 15–30 minutes improves both texture and flavor.
