These Crispy Pickle Cheese Bites are salty, tangy, crunchy little appetizers that disappear fast the moment they hit the table. Sharp cheddar, mozzarella, dill pickles, and seasoned breadcrumbs combine into golden baked bites with crispy edges and gooey cheesy centers. They’re perfect for game nights, lake weekends, parties, or anytime you want an easy crowd-pleasing snack without deep frying.
Ingredients
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup finely chopped dill pickles, drained and patted very dry
- 1/2 cup Italian-style breadcrumbs
- 1 Tablespoon grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1 large egg
- 1 Tablespoon chopped fresh dill (optional)
- Nonstick cooking spray or parchment paper
Preparation
- Preheat oven to 375°F.
- Line a light-colored aluminum baking sheet with parchment paper.
- Pat the chopped pickles thoroughly dry with paper towels to remove excess moisture.
- In a mixing bowl, combine cheddar cheese, mozzarella cheese, chopped pickles, breadcrumbs, Parmesan cheese, garlic powder, onion powder, black pepper, egg, and fresh dill if using.
- Stir until fully combined.
- Scoop approximately 1 Tablespoon portions and firmly compress into small mounds.
- Place on the prepared baking sheet and gently flatten slightly.
- Lightly spray the tops with cooking spray for additional browning and crispness.
- Bake for 10–14 minutes or until golden brown around the edges and crispy on the bottom.
- Allow to cool for 3–5 minutes before serving.
Cook’s Notes
- Drying the pickles thoroughly is critical. Excess moisture can prevent the bites from crisping properly.
- No additional salt is recommended because the pickles, cheddar, Parmesan, and breadcrumbs already provide plenty of seasoning.
- Pepper Jack cheese can be substituted for part of the mozzarella for a spicier version.
- These cook exceptionally well in an air fryer at 375°F for approximately 8–10 minutes.
- Serve immediately for the best texture and cheese pull.
- Ranch seasoning can be added for an even more snack-bar-style flavor profile.
Serving Suggestions
- Serve with ranch dressing, spicy ranch, or chipotle aioli.
- Pair alongside burgers, smoked meats, wings, or barbecue platters.
- Garnish with fresh dill and sliced Jalapeños for extra color and flavor.
- Excellent for football parties, poker nights, lake weekends, and casual entertaining spreads.
