Ingredients
For the Meatballs:
- 2 cloves garlic
- 1 serrano pepper, stem removed
- 1-inch piece fresh ginger, peeled
- 1/2 cup loosely packed fresh cilantro
- 3 teaspoons fish sauce
- 1 1/2 tablespoons brown sugar
- 1 tablespoon + 1 teaspoon cornstarch
- 1 teaspoon lime juice or rice vinegar
- 1 pound ground chicken
- 2 tablespoons olive oil
- 1/4 teaspoon kosher salt
- 2 tablespoons water
For Serving:
- 4 pieces soft French bread, naan, or pita, warmed
- 1/2 cup mayonnaise or Kewpie mayonnaise
- 1 cucumber, thinly sliced
- 1 shallot or small red onion, thinly sliced
- 2 tablespoons chopped fresh cilantro
- 1/4 cup fresh mint leaves
- 1/4 cup Thai basil leaves (optional)
- Chili crisp or sriracha, to taste
Pickled Vegetables:
- 1/2 cup pickled carrots
- 1/2 cup pickled daikon radish
Preparation
- Add the garlic, serrano pepper, ginger, and 1/2 cup cilantro to a food processor or chopper. Pulse until finely minced.
- Transfer the mixture to a large bowl. Add the fish sauce, brown sugar, cornstarch, lime juice or rice vinegar, ground chicken, and salt. Mix gently until just combined. Do not overmix, as ground chicken can become dense.
- Form the mixture into 12 meatballs. The mixture will be soft and somewhat sticky; lightly oiling your hands can make shaping easier.
- Heat the olive oil in a large skillet with a lid over medium-high heat.
- Add the meatballs to the skillet and cook for 1–2 minutes until lightly browned on the first side.
- Carefully add 2 tablespoons water to the skillet and immediately cover with the lid. Steam for 2–3 minutes.
- Remove the lid, turn the meatballs, add another splash of water if needed, cover again, and cook until golden brown and cooked through, about 8–10 minutes total. The meatballs are done when they reach an internal temperature of 165°F.
- Warm the bread until soft and pliable. For French bread, lightly toast the cut sides for extra texture.
- Spread each piece of bread with mayonnaise or Kewpie mayo.
- Add three meatballs to each serving and top with cucumber, shallot, cilantro, mint, optional Thai basil, and pickled vegetables if using.
- Finish with chili crisp or sriracha to taste.
- Serve immediately while the bread is warm and the vegetables remain crisp.
Cook’s Notes
- If the chicken mixture feels too wet to shape, refrigerate it for 15–20 minutes or add an extra teaspoon of cornstarch.
- Lightly wetting or oiling your hands makes shaping the meatballs easier.
- Kewpie mayonnaise adds a richer, slightly sweeter flavor that pairs beautifully with the ginger and fish sauce.
- Thai basil contributes subtle anise notes that complement the ginger and herbs.
- Soft French bread provides the most traditional banh mi experience, while naan offers a delicious fusion variation.
- Meatballs can be prepared up to 24 hours in advance and refrigerated before cooking.
- Cooked meatballs can be frozen for up to 3 months. Thaw overnight in the refrigerator and reheat gently.
- Leftover meatballs make excellent rice bowls, lettuce wraps, or noodle bowls.
