This elevated version of classic candied bacon balances sweet, smoky, salty, and spicy flavors for an irresistible brunch treat. Thick-cut bacon is coated with brown sugar, maple syrup, coarse black pepper, and a touch of cayenne, then slowly baked until crisp and caramelized. Perfect for brunch boards, burgers, Bloody Mary garnishes, or simply enjoyed on its own.
Ingredients
- 1/2 Cup (100 grams) packed dark brown sugar
- 2 Tablespoons (30 milliliters) pure maple syrup
- 1 teaspoon coarse black pepper
- 1/4 teaspoon cayenne pepper
- 1 pound (454 grams) thick-cut bacon
Preparation
- Preheat the oven to 325°F (163°C).
- Line a rimmed baking sheet with aluminum foil and place a wire rack on top.
- In a small bowl, combine the brown sugar, maple syrup, black pepper, and cayenne pepper until evenly mixed.
- Arrange the bacon slices in a single layer on the wire rack.
- Evenly distribute the brown sugar mixture over the bacon, gently pressing it onto the surface of each slice.
- Bake for 30 to 35 minutes, or until the bacon is richly browned, the sugar coating is bubbling, and the bacon feels firm when lightly touched.
- Remove from the oven and allow the bacon to cool on the rack for 10 minutes. The glaze will continue to set and develop a crisp, candy-like texture as it cools.
- Transfer to a serving platter and serve warm or at room temperature.
Cook’s Notes
- Thick-cut bacon is strongly recommended. Thin bacon can become overly crisp before the glaze fully caramelizes.
- Dark brown sugar provides a deeper molasses flavor, but light brown sugar may be substituted.
- For a milder version, reduce the cayenne pepper to 1/8 teaspoon or omit it entirely.
- For additional smoky flavor, substitute 1/2 teaspoon chipotle powder for the cayenne pepper.
- Bourbon Maple Variation: Add 1 teaspoon bourbon to the maple syrup mixture before coating the bacon. The alcohol evaporates during baking while leaving subtle oak, vanilla, and caramel notes.
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat briefly in a 300°F (149°C) oven.
