Carter Family Recipes

Roasted Salsa Ranchera is one of the great foundation sauces of traditional Mexican cuisine. Ripe Roma tomatoes, Jalapeño, onion, and garlic are roasted until lightly charred, then blended with fresh cilantro and gently simmered to create a rich, smoky salsa with remarkable depth of flavor. Unlike fresh table salsas, Salsa Ranchera develops its character through roasting and a brief simmer, producing a smooth, spoonable sauce that perfectly complements Huevos Rancheros, enchiladas, chilaquiles, tacos, grilled meats, and countless other Mexican favorites.

Simple ingredients, traditional techniques, and bold flavors make this timeless salsa a recipe you’ll return to again and again.

Yield: About 3 Cups

Prep Time: 10 Minutes

Cook Time: 25 Minutes

Total Time: 35 Minutes

Ingredients

  • 2 Pounds Roma Tomatoes
  • 1 Large Jalapeño
  • 1 Serrano Pepper (optional)
  • 1/2 Medium White Onion
  • 3 Garlic Cloves, unpeeled
  • 1/4 Cup Fresh Cilantro Leaves
  • 1 Tablespoon Vegetable Oil
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Freshly Ground Black Pepper

Preparation

  1. Preheat the broiler to High or prepare a hot charcoal or gas grill.
  2. Arrange the Roma Tomatoes, Jalapeño, Serrano Pepper, White Onion, and Garlic Cloves on a rimmed baking sheet.
  3. Broil or grill, turning occasionally, until the vegetables are softened and lightly charred. The tomatoes should blister and begin to collapse, about 10 to 15 minutes.
  4. Remove the vegetables from the heat. Peel the Garlic Cloves and remove the stems from the peppers. For a milder salsa, remove the seeds from the Jalapeño and Serrano Pepper.
  5. Transfer the roasted vegetables to a blender or food processor. Add the Fresh Cilantro, Kosher Salt, and Freshly Ground Black Pepper.
  6. Pulse until the salsa reaches a smooth, spoonable consistency with small pieces of tomato still visible. Avoid over-blending.
  7. Heat the Vegetable Oil in a medium saucepan over medium heat. Carefully pour in the blended salsa.
  8. Reduce the heat to low and simmer for 10 to 15 minutes, stirring occasionally, until the salsa thickens slightly and the flavors fully develop.
  9. Taste and adjust the seasoning with additional Kosher Salt and Freshly Ground Black Pepper, if needed.
  10. Serve warm, or cool completely before refrigerating.

Cook’s Notes

  • Chef’s Tip: Roast the Roma Tomatoes until they develop dark blistered spots and begin to collapse. This caramelization produces the deep, smoky flavor that defines authentic Salsa Ranchera.
  • Roma Tomatoes are ideal because they are meatier and contain less moisture than slicing tomatoes, creating a naturally thicker salsa.
  • Simmering the salsa after blending softens the tomatoes’ natural acidity while bringing all of the flavors together.
  • Leave the Jalapeño seeds intact for medium heat, or remove them for a milder salsa.
  • Refrigerate in an airtight container for up to 5 days. The flavor becomes even richer after resting overnight.
