Sweet, smoky, savory, and bursting with rich blackberry flavor, this Blackberry Bourbon Bacon Jam is the perfect balance of rustic comfort and gourmet sophistication. Thick-cut bacon is slowly rendered before being combined with caramelized onions, juicy blackberries, bourbon, maple syrup, and a carefully selected blend of seasonings that create remarkable depth without overwhelming the natural flavors. Fresh thyme, Dijon mustard, espresso powder, and a splash of fresh lemon juice elevate this artisan-style jam into something truly special. Whether spread on a burger, paired with creamy Brie, or served alongside a charcuterie board, every bite delivers an irresistible combination of smoky, sweet, tangy, and savory flavors.

Ingredients

  • 1 pound thick-cut bacon, diced
  • 1 large yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 1/2–2 cups fresh or frozen blackberries
  • 1/4 cup bourbon or rye whiskey, divided
  • 1/4 cup apple cider vinegar
  • 1/4 cup packed brown sugar
  • 2 Tablespoons pure maple syrup
  • 1 teaspoon Dijon mustard
  • 1 teaspoon fresh thyme leaves
  • 3/4 teaspoon freshly cracked black pepper
  • 1/4 teaspoon chipotle powder
  • 1/2 teaspoon espresso powder
  • 1 teaspoon fresh lemon juice

Preparation

  1. In a large Dutch oven or heavy skillet, cook the diced bacon over medium heat until crisp and deeply browned, about 12–15 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate. Reserve 1–2 tablespoons of the rendered bacon fat in the pan and discard the remainder.
  2. Add the diced onion to the reserved bacon fat and cook over medium-low heat for 8–10 minutes, stirring occasionally, until soft, lightly caramelized, and golden. Stir in the minced garlic and cook for 1 minute, just until fragrant.
  3. Pour 3 tablespoons of the bourbon into the pan, scraping the bottom to loosen all of the flavorful browned bits. Allow the bourbon to simmer for about 1 minute.
  4. Stir in the blackberries, apple cider vinegar, brown sugar, maple syrup, Dijon mustard, thyme, black pepper, chipotle powder, and espresso powder. Bring the mixture to a gentle simmer.
  5. Continue cooking over medium-low heat for 15–20 minutes, stirring occasionally. As the berries soften, gently mash about half of them with the back of a spoon while leaving the remaining berries mostly intact to provide bursts of fresh blackberry flavor and texture.
  6. Stir the cooked bacon back into the skillet and continue simmering for another 8–10 minutes, stirring occasionally, until the mixture becomes thick, glossy, and spreadable.
  7. During the final minute of cooking, stir in the remaining 1 tablespoon of bourbon along with the fresh lemon juice. Remove from the heat and allow the jam to cool for about 15 minutes.
  8. Spoon the cooled jam into clean glass jars. The jam will continue to thicken as it cools. Store tightly covered in the refrigerator for up to 2 weeks.

Cook’s Notes

  • Thick-cut bacon provides the best texture and hearty bites throughout the finished jam.
  • Adding most of the bourbon early develops its rich flavor, while stirring in the final tablespoon at the end preserves its distinctive aroma.
  • Espresso powder enhances the smoky bacon and deepens the blackberry flavor without making the jam taste like coffee.
  • Leaving some of the blackberries whole creates a more rustic texture and beautiful presentation.
  • For a sweeter jam, increase the maple syrup to 3 tablespoons. For a more savory version, reduce the brown sugar slightly.
  • Blackberry Bourbon Bacon Jam freezes beautifully for up to 3 months in airtight containers.

Serving Suggestions

Blackberry Bourbon Bacon Jam is incredibly versatile and adds a gourmet touch to countless dishes. Serve it on grilled burgers topped with smoked Gouda or sharp cheddar, spread it over warm biscuits or toasted sourdough, spoon it over baked Brie, pair it with goat cheese on crostini, layer it into grilled cheese sandwiches, or serve it alongside roasted pork tenderloin. It also makes an outstanding addition to a charcuterie board featuring artisan cheeses, cured meats, toasted nuts, crackers, and fresh seasonal fruit.

Beverage Suggestions

Pair this rich, smoky jam with a small-batch Kentucky bourbon or smooth rye whiskey for a classic combination. Wine lovers will appreciate Cabernet Sauvignon, Syrah, or Zinfandel, while craft beer enthusiasts will enjoy a robust porter, stout, or brown ale. For a non-alcoholic pairing, sparkling apple cider or a freshly brewed cup of dark roast coffee provides an equally satisfying complement.
