Blueberry Cowboy Candy combines the sweet heat of classic Cowboy Candy with juicy blueberries to create a colorful refrigerator condiment that’s as beautiful as it is delicious. The blueberries infuse the syrup with a rich burgundy color while adding bursts of fruity sweetness that perfectly complement the candied jalapeños. Cooking a portion of the blueberries while folding in the remainder after cooking creates layers of flavor, texture, and visual appeal. Whether served over cream cheese, paired with grilled meats, or featured on a charcuterie board, this versatile condiment is sure to become a favorite for everyday meals and special occasions alike.
Yield: About 3 cups (approximately one 24-ounce jar or two 12-ounce jars)
Ingredients
- 2 (12-ounce) jars sliced pickled jalapeños, drained
- 1/4 cup reserved pickling liquid
- 2 1/2 cups unsweetened frozen blueberries, divided
- 1 cup granulated sugar
- 1/4 cup packed light brown sugar
- 1/4 cup apple cider vinegar
- 2 tablespoons honey
- 1/2 teaspoon mustard seed
- 1/2 teaspoon celery seed
- 1/2 teaspoon garlic powder
- 1/8 teaspoon ground turmeric
- 1/8 teaspoon cayenne pepper (optional)
- 1/8 teaspoon kosher salt
- 1 teaspoon finely grated lemon zest
- 1 teaspoon fresh lemon juice
- 1 tablespoon unsalted butter (optional, helps reduce foaming and gives the finished syrup a smoother appearance)
Preparation
1. Prepare the jalapeños: Drain the jalapeños, reserving 1/4 cup of the pickling liquid.
2. Make the syrup: In a medium saucepan, combine the granulated sugar, brown sugar, apple cider vinegar, reserved pickling liquid, honey, mustard seed, celery seed, garlic powder, turmeric, cayenne pepper, kosher salt, lemon zest, and lemon juice. Bring to a gentle boil over medium heat, stirring until the sugar has completely dissolved.
3. Simmer the syrup: Reduce the heat and simmer for 5 to 7 minutes, allowing the syrup to thicken slightly and the flavors to meld. The finished syrup should lightly coat the back of a spoon and will continue to thicken as it cools.
4. Cook the blueberries: Stir in 1 1/2 cups of the unsweetened frozen blueberries and simmer for 3 to 4 minutes, just until they begin to soften. Some berries will burst, enriching the syrup with both color and flavor.
5. Add the jalapeños: Stir in the jalapeño slices and continue simmering for 2 minutes, coating them evenly in the blueberry syrup.
6. Finish the recipe: Remove the saucepan from the heat. Stir in the remaining 1 cup of frozen blueberries and the butter, if using. Adding the remaining blueberries off the heat helps preserve their shape and fresh blueberry flavor while the residual heat gently softens them.
7. Jar the Cowboy Candy: Transfer the mixture to clean glass jars and allow it to cool completely to room temperature.
8. Refrigerate: Cover and refrigerate for at least 24 hours before serving. For the fullest flavor, allow the Cowboy Candy to rest for 48 to 72 hours before enjoying.
Cook’s Notes
- Use unsweetened frozen blueberries. Do not thaw them before adding to the syrup.
- Frozen blueberries release more juice during cooking, creating a richly colored syrup while remaining available year-round.
- Gently invert the jar once or twice before serving to redistribute the berries without crushing them.
- If the syrup becomes too thick after refrigeration, allow the jar to stand at room temperature for 10 to 15 minutes before serving.
- Adjust the cayenne pepper to achieve your preferred level of heat.
- The flavor reaches its peak after 48 to 72 hours of refrigeration.
- Store tightly covered in the refrigerator for up to 3 months. Always use a clean utensil when serving.
- Discard the Cowboy Candy if mold develops, the lid becomes swollen, or any off odors or flavors are present.
- This recipe is intended for refrigerator storage and is not suitable for shelf-stable canning.
