Ingredients
Roasted Tomatoes
- 2 pints cherry or grape tomatoes
- 4 cloves garlic, thinly sliced
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon fresh thyme leaves
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
Whipped Feta
- 8 ounces block feta cheese packed in brine, drained and crumbled
- 4 ounces cream cheese, softened
- 1/4 cup plain Greek yogurt
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon honey
- 1 teaspoon finely grated lemon zest
- 1 tablespoon fresh lemon juice
Garnishes
- Fresh basil, thinly sliced
- Additional fresh thyme leaves
- Freshly cracked black pepper
- Flaky sea salt
- Toasted pine nuts or chopped pistachios (optional)
- Hot honey, for drizzling (optional)
For Serving
- 1 artisan baguette, sourdough, or ciabatta loaf, sliced
- Extra-virgin olive oil for brushing the bread
Preparation
- Position an oven rack in the center of the oven and preheat the oven to 375°F.
- Place the tomatoes and sliced garlic into a medium baking dish. Add the olive oil, thyme, kosher salt, and black pepper, then gently toss until everything is evenly coated.
- Roast for 30 to 35 minutes, stirring once halfway through, until the tomatoes have blistered and burst, releasing their sweet juices into the olive oil. The garlic should become soft and lightly caramelized without browning. The flavorful roasting juices are an essential part of the finished dish, so reserve every drop.
- While the tomatoes roast, prepare the whipped feta. Combine the feta, cream cheese, Greek yogurt, olive oil, honey, lemon zest, and lemon juice in the bowl of a food processor.
- Process for 2 to 3 minutes, stopping once or twice to scrape down the sides of the bowl, until the mixture is exceptionally smooth, creamy, and light. The finished texture should resemble a rich mousse.
- Lightly brush both sides of the bread slices with olive oil. Grill or toast until golden brown with crisp edges while the centers remain slightly tender.
- Spread the whipped feta across a large shallow serving platter or bowl. Using the back of a spoon, create generous swirls and shallow valleys that will capture the warm tomatoes and their flavorful juices.
- Spoon the roasted tomatoes and garlic over the whipped feta, followed by several spoonfuls of the reserved roasting juices.
- Finish with fresh basil, additional thyme, freshly cracked black pepper, a light sprinkle of flaky sea salt, and toasted pine nuts or chopped pistachios, if desired. For a sweet-spicy finish, drizzle lightly with hot honey just before serving.
- Serve immediately with the warm grilled bread while the tomatoes are still slightly warm and the whipped feta remains cool and creamy.
Cook’s Notes
- Purchase block feta packed in brine whenever possible. It has a creamier texture and noticeably better flavor than pre-crumbled feta.
- Bringing the cream cheese to room temperature before blending produces an exceptionally smooth whipped feta.
- Greek yogurt lightens the mixture while adding a pleasant tang without overpowering the feta.
- The roasted tomato juices are concentrated with olive oil, garlic, herbs, and natural tomato sweetness. Spoon them generously over the finished appetizer and don’t leave any behind in the baking dish.
- The whipped feta may be prepared up to two days in advance. Cover tightly and refrigerate. Remove from the refrigerator about 20 minutes before serving to allow it to soften slightly.
- The tomatoes may be roasted several hours ahead and gently rewarmed before assembling the dish.
- Leftover whipped feta makes an outstanding spread for sandwiches, wraps, burgers, grilled chicken, or roasted vegetables.
- For additional flavor, sprinkle the tomatoes with a pinch of crushed red pepper flakes before roasting or garnish the finished dish with finely grated Parmesan cheese.
