Whipped Ricotta Caprese Pasta combines tender pasta with a silky ricotta and Parmigiano-Reggiano sauce, sweet oven-roasted cherry tomatoes, fresh basil, and a finishing drizzle of balsamic glaze.
Lemon brightens the creamy sauce, while roasted garlic, black pepper, and crushed red pepper add depth without overpowering the delicate ricotta. Folding most of the roasted tomatoes and their flavorful juices into the pasta ensures that every serving contains the full Caprese-inspired combination.

Cooking Time: 35–40 minutes
Total Time: Approximately 55 minutes
Ingredients
For the Roasted Tomatoes
- 2 pints cherry or grape tomatoes
- 3 tablespoons extra-virgin olive oil
- 2 garlic cloves, thinly sliced
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon crushed red pepper flakes
For the Whipped Ricotta Pasta
- 8 ounces lumache, rigatoni, mezzi rigatoni, shells, or another short pasta
- 1 1/4 cups whole-milk ricotta
- 1/3 cup finely grated Parmigiano-Reggiano, plus additional for serving
- Zest of 1/2 lemon
- 2 teaspoons freshly squeezed lemon juice
- 1/4 teaspoon kosher salt, plus additional to taste
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons reserved pasta cooking water, plus additional as needed
For Serving
- 1/4 cup loosely packed fresh basil leaves, torn or thinly sliced
- Balsamic glaze, to taste
- Extra-virgin olive oil, for drizzling
- Finely grated Parmigiano-Reggiano, to taste
- Freshly ground black pepper, to taste
Preparation
- Preheat the oven to 400°F.
- Place the cherry tomatoes in a large baking dish. Add the olive oil, sliced garlic, salt, black pepper, and crushed red pepper flakes. Toss until the tomatoes are evenly coated.
- Roast the tomatoes for 30–35 minutes, stirring once halfway through, until they are softened, blistered, and beginning to burst. Remove them from the oven and set aside, reserving all of the tomato juices.
- While the tomatoes roast, bring a large pot of generously salted water to a boil.
- Place the ricotta, Parmigiano-Reggiano, lemon zest, lemon juice, salt, and black pepper in a food processor or blender. Process for 1–2 minutes, scraping down the sides as necessary, until the mixture is smooth, light, and glossy.
- Add the pasta to the boiling water and cook until al dente according to the package directions.
- Before draining the pasta, reserve 1/2 cup of the pasta cooking water. Drain the pasta without rinsing it.
- Return the empty pasta pot to the stove with the burner turned off. Add the whipped ricotta mixture and 2 tablespoons of the reserved pasta water. Stir until smooth and creamy.
- Add the hot pasta and toss vigorously until evenly coated. Add additional reserved pasta water, 1 tablespoon at a time, only as needed, until the sauce is silky and clings to the pasta. The sauce should remain slightly loose because it will thicken as it rests.
- Fold approximately 2/3 of the roasted tomatoes, the lightly browned roasted garlic slices, and several spoonfuls of the tomato juices into the pasta. Discard any garlic slices that have become excessively dark or bitter.
- Taste and adjust the seasoning with additional salt, black pepper, or lemon juice as needed.
- Divide the pasta among serving bowls and spoon the remaining roasted tomatoes and their juices over each serving.
- Finish with fresh basil, a light drizzle of balsamic glaze, additional Parmigiano-Reggiano, extra-virgin olive oil, and freshly ground black pepper. Serve immediately.
Cook’s Notes
- Use whole-milk ricotta: Whole-milk ricotta produces a smoother, richer sauce than part-skim ricotta.
- Drain watery ricotta: When the ricotta contains visible liquid, drain it in a fine-mesh strainer for 20–30 minutes before whipping.
- Do not heat the ricotta over direct heat: High heat can cause ricotta to tighten, separate, or become grainy. The residual heat from the pot and pasta is sufficient to warm the sauce.
- Add the pasta water gradually: The roasted tomatoes will contribute additional liquid. Begin with 2 tablespoons and add more only when needed.
- Season after combining: Ricotta and Parmigiano-Reggiano vary in saltiness. Taste the completed sauce before adding additional salt.
- Use the roasted tomato juices: The juices contain concentrated tomato, garlic, and olive oil flavors and are an important part of the sauce.
- Watch the garlic closely: Thinly sliced garlic can darken quickly. Discard any slices that become deeply browned or bitter.
- Add balsamic glaze sparingly: Too much balsamic glaze can overwhelm the tomatoes and make the pasta excessively sweet.
- For a stronger Caprese character: Add 2–3 ounces of torn fresh mozzarella or mozzarella pearls immediately before serving. Allow the pasta to cool for approximately 1 minute before adding the mozzarella so it softens without completely melting.
- For additional protein: Top the pasta with sliced grilled chicken, grilled shrimp, or crisp prosciutto.
