A chopped cheese is a hot, messy, deeply savory sandwich made with seasoned ground beef, sautéed onions, and American cheese chopped together on a griddle. The filling is piled into toasted hero rolls and finished with shredded lettuce, tomato, mayonnaise, and ketchup.
This version keeps the beef juicy and generously portioned while reducing excessive meat, salt, and mayonnaise. Wrapping the finished sandwiches briefly in foil softens the rolls and gives them the classic bodega-style texture.
Yield: 4 sandwiches
Prep Time: 20 minutes
Cook Time: 25 minutes
Total Time: 45 minutes
Ingredients
Beef and Onion Filling
- 1 1/2 pounds 80/20 ground beef
- 1 large yellow onion, thinly sliced
- 1 tablespoon neutral oil or beef tallow
- 2 teaspoons adobo seasoning
- 1 teaspoon sazón seasoning
- 1/2 teaspoon freshly ground black pepper
- 6 to 8 slices American cheese
- 1 teaspoon Worcestershire sauce, optional
- Salt, only if needed after tasting
Sandwiches
- 4 soft 7- to 8-inch hero or hoagie rolls
- 4 tablespoons mayonnaise, divided
- 2 to 3 tablespoons ketchup
- 2 cups finely shredded iceberg lettuce
- 2 Roma tomatoes, thinly sliced
- Pickled cherry peppers or sliced pickled jalapeños, optional
Instructions
Prepare the Onions
- Heat the oil or beef tallow on a large griddle, cast-iron skillet, or heavy-bottomed skillet over medium heat.
- Add the sliced onion and cook for 8 to 12 minutes, stirring occasionally, until softened and browned around the edges.
- Transfer the onions to a plate and set aside.
Toast the Rolls
- Split the hero rolls lengthwise without cutting completely through.
- Spread 2 tablespoons of the mayonnaise evenly over the cut sides of the rolls.
- Place the rolls cut-side down on the griddle.
- Toast for 1 to 2 minutes, until lightly golden.
- Remove the rolls and set aside.
Cook the Beef
- Increase the heat to medium-high.
- Divide the ground beef into four equal portions and place them on the hot griddle.
- Press each portion into a patty approximately 1/2 inch thick and roughly the length of the roll.
- Season each portion with approximately:
- 1/2 teaspoon adobo seasoning
- 1/4 teaspoon sazón seasoning
- A light sprinkling of black pepper
- Cook undisturbed for 3 to 4 minutes, until the underside develops a dark brown crust.
- Flip the beef and cook for another 2 minutes.
- Spoon the cooked onions evenly over the beef.
- Add the Worcestershire sauce, if using.
- Use two spatulas or a sturdy metal spatula to chop the beef and onions together into a mixture of small and medium-sized pieces.
Add the Cheese
- Divide the beef and onion mixture into four portions on the griddle.
- Place 1 1/2 to 2 slices of American cheese over each portion.
- Allow the cheese to soften for approximately 30 seconds.
- Chop and fold the cheese into the beef until melted and evenly distributed.
- Taste the filling and add salt only if needed.
Assemble the Sandwiches
- Spread the remaining 2 tablespoons of mayonnaise lightly inside the toasted rolls.
- Add a thin line of ketchup.
- Place one portion of the hot beef and cheese mixture into each roll.
- Top with tomato slices, shredded lettuce, and pickled peppers, if using.
- Wrap each sandwich snugly in aluminum foil.
- Let the wrapped sandwiches rest for 1 to 2 minutes before serving. This softens the bread slightly and helps the sandwich hold together.
Cook’s Notes
- Ground beef: An 80/20 blend provides enough fat for browning and moisture. Leaner beef can produce a drier filling.
- Seasoning: Adobo, sazón, American cheese, ketchup, and the rolls may all contribute salt. Begin conservatively and taste before adding more.
- Cheese: Deli American cheese has a richer flavor, but individually wrapped American cheese also melts smoothly and works well.
- Onions: Cooking the onions for 8 to 12 minutes keeps them savory with lightly caramelized edges. Cooking them longer will create a sweeter sandwich.
- Worcestershire sauce: This is optional. One teaspoon adds savory depth without changing the sandwich’s essential flavor.
- Griddle temperature: The cooking surface should be hot enough to brown the beef rather than steam it.
- Do not over-chop: Leave some larger pieces of beef for texture. The filling should not resemble finely crumbled taco meat.
- Sauce: Apply the mayonnaise and ketchup lightly. Too much sauce can make the sandwich greasy and overwhelm the beef.
- Roll size: Soft 7- to 8-inch rolls provide the best filling-to-bread ratio.
- Timing: On a large griddle, toast the rolls during the final few minutes of cooking so they remain warm at assembly.
- Make-ahead preparation: The onions and toppings can be prepared in advance, but the beef and cheese filling is best cooked immediately before serving.
- Reheating: Reheat leftover filling in a skillet over medium heat with 1 to 2 teaspoons of water. Cover briefly to restore moisture.
