- 2 teaspoons fresh lemon juice
- 1/2 teaspoon Worcestershire sauce

Finishing
- Finely grated Parmigiano-Reggiano cheese
- Finely grated lemon zest
- Finely chopped fresh Italian parsley
- Flaky sea salt

Instructions
- Drain the olives thoroughly and pat completely dry with paper towels. For the crispiest coating, refrigerate uncovered for 30 minutes to remove additional surface moisture.
- Pulse the panko breadcrumbs in a food processor 5–6 times until slightly finer, but not powdery.
- In a shallow bowl, whisk together the eggs, Dijon mustard, and whole milk.
- In a second shallow bowl, combine the panko breadcrumbs, Parmesan cheese, kosher salt, garlic powder, onion powder, smoked paprika, cayenne pepper, black pepper, oregano, parsley, and thyme.
- Place the flour in a third shallow bowl.
- Lightly coat each olive in the flour.
- Dip the olives into the egg mixture.
- Roll the olives in the seasoned panko mixture, pressing gently so the coating adheres.
- Repeat the egg and panko coating one more time for an extra-crispy steakhouse crust.
- Refrigerate the breaded olives for 20–30 minutes.
- Heat the oil to 365°F.
- Fry the olives in small batches for 2–3 minutes, turning occasionally until evenly golden brown.
- Remove the olives with a slotted spoon and drain on a wire rack.
- While still hot, lightly sprinkle with flaky sea salt, grate Parmigiano-Reggiano over the olives, add a light dusting of lemon zest, and finish with chopped Italian parsley.
- In a small bowl, whisk together the mayonnaise, sour cream, roasted garlic, Dijon mustard, lemon zest, lemon juice, Worcestershire sauce, smoked paprika, hot sauce, salt, and pepper until smooth and creamy.
- Arrange the olives on a warm serving platter with the roasted garlic-lemon aioli and lemon wedges. Just before serving, lightly squeeze a lemon wedge over the olives for a bright finish.
Cook’s Notes
Yield: 6 appetizer servings
- Thoroughly drying the olives is the secret to breading that stays attached.
- Double breading creates the thick, crunchy crust found in premium steakhouses.
- Pulsing the panko creates a finer, more elegant coating while maintaining its crisp texture.
- Maintain the oil between 360°F and 365°F throughout frying.
- Fry only a few olives at a time to keep the oil temperature consistent.
- For an air fryer, spray generously with avocado oil and cook at 400°F for 7–9 minutes, turning halfway through.

Chef’s Notes
Castelvetrano olives are naturally buttery and less salty than most green olives, making them ideal for frying. The light herb seasoning enhances rather than masks their flavor, while the finishing garnish of Parmigiano-Reggiano, fresh lemon zest, and parsley adds aroma, richness, and brightness without overpowering the olives
